03.01.2022 Schools back! And with it the inevitable question about a health snack for the lunchbox. This is a quick and easy recipe made in minutes and great for the WORKING GIRL as well. Make these mini baked ricottas in the mini cupcake pans and have health balanced protein snack for mental energy and peace of mind that the mind and body have all its essential nutrients in one snack. Mini baked Ricotta Blend together 2 Eggs, 30ml of Olive Oil or Rice Bran Oil until fluffy, then a...dd handful of finely chopped fresh seasonal greens (baby spinach, basil, parsley, rocket etc) and 1 teaspoon chopped crushed fresh garlic, 1x chopped onion, 2 teaspoons finely grated fresh turmeric OR 1/4 tsp of ground tumeric, salt and pepper. ( I prefer to saut the garlic, onion and ginger and tumeric first in a little coconut Oil.) Once combined blend in 500gm fresh ricotta. until smooth and creamy. Spoon into mini cupcake pans greased with coconut oil to give it a nice browned finish when cooked. Top with a cut Olive or a sprinkle of chilli. Cook in oven at 140 160 degrees (depending on oven) for about 10 15mins until golden brown. Enjoy. These can also be made in normal cupcake size and with a salad makes a great lunch.
