25.01.2022 Super tasty for you & your kids are these Super Seed Oat Crackers. Easy to make and delicious! Prep time 15 min, Cooking time 30 min, Makes 60 crackers INGREDIENTS... 1 cup rolled oats 3 tablespoons sunflower seeds 3 tablespoons pumpkin seeds 2 tablespoons sesame seeds 3 tablespoons Ground Linseed 2 tablespoons Black Chia Seeds 1/4 teaspoon salt 1 teaspoon mixed herbs 2/3 cup boiling water 2 tablespoons canola oil METHOD 1. Preheat oven to 170C. Line a tray with baking paper. 2. Combine the ingredients in a large mixing bowl. Stir well, cover and set aside for 10 minutes. The mixture will feel wet initially until the water is absorbed by the linseed and chia seeds. 3. Tip the dough onto the lined tray and press out into a rectangle. Cover with another sheet of baking paper and use a rolling pin to roll out until 2mm thick. Neaten the edges and use the tip of a knife to cut into approx. 2 x 4cm crackers. 4. Bake for 20 minutes. After this time check the crackers removing any crackers that are ready from the outside. Flip the remaining crackers over and cook for a further 5-10 minutes until golden. Cool crackers on a rack then transfer to a sealed container. Store in the pantry and consume within 1 week. *Variation: roughly grind the sunflower and pumpkin seeds before adding to the mix.

22.01.2022 Use leftover roasted pumpkin or cook double and make a big batch of this delicious Roasted Pumpkin hummus. A healthy dip to serve with Potato Stix or Rice Wheels after school. INGREDIENTS 1 cup pumpkin, peeled and cut into 2 cm cubes 1 teaspoon olive oil... Pinch of salt and pepper 400g can chickpeas, drained and liquid reserved 3 tablespoons lemon juice 1 teaspoon honey (optional but gives the dip a nice flavour balance) 2 tablespoons Flaxseed Oil Black Chia Seeds for sprinkling (optional) METHOD 1. Preheat the oven 190C. 2. Toss the cubed pumpkin with the olive oil and season. Spread in a single layer on a roasting tray. Roast for 15 minutes, turn the pumpkin pieces and roast for a further 10 minutes until tender. Cool. 3. Place the cooled pumpkin and remaining ingredients into a food processor along with cup reserved chickpea liquid. Blend until smooth. 4. Sprinkle chia seeds on top (optional). 5. Serve 1/3 cup of hummus with Rice Wheels or Potato Stix. Prep time 15 min Cooking time 25 min Makes 2 cups

19.01.2022 Make your own cookies with your kids with this easy to follow recipe for Thumb Print Berry Cookies. Prep time 20 min, Cooking time 15 min, Makes 16 cookies INGREDIENTS... 100g unsalted butter at room temperature cup sugar 1 egg, medium size teaspoon vanilla essence 1 cup flour cup Ground LSA teaspoon baking powder 2 tablespoons Strawberry preserve or 4 fresh strawberries, chopped METHOD 1. Preheat the oven to 180C. Line an oven tray with baking paper. 2. Cream the butter and sugar in an electric mixer or food processor until fluffy. Add the egg and vanilla and mix to combine. Add the flour, LSA and baking powder, mixing briefly to combine. 3. Roll the dough into 16 small walnut sized balls. Arrange the cookies on the tray with 2cm space between each then make an indent in the middle of each ball with thumb. Use a small spoon to fill the holes with teaspoon strawberry preserve or fresh strawberry pieces. 4. Bake for 12-15 minutes until lightly golden. Cool on a rack then store in a sealed container. Consume within 3 days.

12.01.2022 We're always looking for healthier snacking options for our children! You should try these delicious Sweet Corn & Feta Fritters. The kids (and you!) will love them! Ingredients: 1 cup frozen corn 50g feta, crumbled... 1 tbsp chopped parsley 2 eggs, medium sized 1/4 cup rice flour salt & pepper to season oil for cooking Method: 1. Combine all the ingredients in a mixing bowl. Check the consistency, the batter should be quite thick so it will hold its shape while cooking. Add extra flour if needed. 2. Heat a frying pan over a moderate heat, add a little oil and drop tablespoon amounts of batter into the pan. Cook until golden around the edges then flip and cook for a further minute. Cool on a rack then keep in a sealed container in the fridge. 3. Serve with zesty yoghurt dip - combine 4 tbsp natural yoghurt with 1 tsp lemon zest and tsp grainy mustard.

08.01.2022 Get ready for back to school with this Mini Tuna & Carrot Frittatas lunchbox recipe to fill bellies with a nutritious lunchtime treat. INGREDIENTS 3 eggs, medium sized 185g can tuna in spring water, well drained... 3 tablespoons ground LSA 1 carrot, finely grated 1 teaspoon chopped parsley Handful parmesan cheese + extra for sprinkling Black Chia Seeds for sprinkling METHOD 1. Preheat the oven to 180C. Line a medium muffin tray with 6 squares of baking paper. 2. Beat the eggs in a bowl and add the remaining ingredients. Combine well. Distribute the mixture evenly into the lined muffin tray. Sprinkle each with a little extra parmesan and chia seeds. 3. Place in the oven and bake for 20-25 minutes until the cheese is melted and egg is set. 4. Remove the frittatas from the tin and cool on a rack. Store in a sealed container in the fridge and wrap individually for school lunches. Consume within 3 days.

01.01.2022 Encourage your kids to get involved with food by helping to decorate their own mini veggie pizzas. Try this quick, simple and delicious recipe these school holidays! INGREDIENTS 3/4 cup white flour 1/3 cup Rye Meal flour... 1 teaspoon baking powder Handful (30g) grated Edam cheese 2 tablespoons canola oil 1/3 cup water FOR TOPPING Thinly sliced tomato 1 cup grated edam cheese 1 carrot, grated Selection of vegetables e.g. capsicum slices, mushrooms slices dried oregano METHOD 1. Preheat oven 220C. 2. Combine the flour, baking powder, salt and cheese in a large mixing bowl. Pour in the olive oil and water and use a fork to mix until the dough comes together. If dough is dry add 1 tablespoon extra water. Tip onto a floured bench and knead briefly until smooth. 3. Divide into 4 balls and roll each into a small round pizza base about 5mm thick. Place on a lined baking tray and arrange with tomato slices. Combine the grated cheese and grated carrot. Scatter of this over the bases, add vegetable toppings and sprinkle with the remaining cheese/carrot mixture. Add a pinch of dried oregano to each pizza. 4. Bake for 10-12 minutes until the base is golden around the edges and cheese melted. Cool on a rack. Store extra pizza in a container in the fridge to reheat as needed.
