25.01.2022 HEALTHY LAMB TACOS My favourite cuisine is definitely Mexican.I mean duh, GUAC!! I love the flavour of juicy lamb with guac, and adding some homemade tomato sauce, adds a salsa like element. RECIPE:... Serves 4 1 Tbsp coconut oil 500g lamb mince 1 brown onion, diced 3 cloves garlic, crushed 1 Tbsp paprika 1/2 tsp cumin 2 Tbsp dried oregano 1/2 cup bone broth or stock 3 Tbsp homemade tomato sauce (optional, can omit or sub for 2 tbsp tomato paste) 1/2 tsp salt 4 spring onions, white part and some of the green part chopped Guacamole: 2 avocados 2 small red onions, diced or 1 large, diced 1/2 cup fresh coriander, diced 1 lime, juiced 1 tsp salt 1/2 tsp pepper Cos lettuce cups to serve Coconut yoghurt or greek yoghurt to serve 500g greens, steamed 1/4 cup olive oil METHOD: 1. Saut the onion and garlic in coconut oil in a medium fry pan. Once translucent, add meat and brown. Break up meat pieces using a flat-ended wooden spoon. Add spices and broth and let simmer for 10-15 minutes. Add 3 tbsp my homemade tomato sauce and mix well. 2. Meanwhile, make the guacamole by mashing the avocado and then adding everything into a bowl and mix until well combined. 3. To serve, place some lamb in a lettuce cup, add guacamole and a dollop of yoghurt. Sprinkle with spring onions and devour! 4. Serve 500g steamed greens with 1/4 cup olive oil over them and salt and pepper to taste.

25.01.2022 PALEO BREAKFAST NACHOS Perfect for a Sunday brunch cook-up, this recipe will become a new fave! Its super easy to make and full of vitamin A which helps supports the immune system. The key to success is slicing the sweet potato super thin, best achieved by using a mandolin. You will need to spread out the chips, and youll need about 3 baking trays to get them nice and crispy. I know cheesy nachos might sound like an oxymoron, but the gooey-ness of the egg ...yolks totally replaces the melted cheese. RECIPE: Nachos: 2 regular size organic sweet potatoes, skin on (I actually used a fucking GIANT organic one which is about equivalent to 2 normal sized ones) Coconut oil for spraying Paprika for sprinkling Nutritional Yeast for sprinkling 1/2 cup corn off the cob (you can use canned corn kernels just make sure there is nothing in the ingredients besides corn) 1 Tbsp ghee (or coconut oil) 1 tsp paprika 1 tsp salt 1 avocado, sliced 1/2 red onion, diced 3 organic eggs 2 tbsp coconut oil for frying 1 spring onion, chopped Salsa: 2 Anaheim peppers (they look like long red capsicums) 1/2 red onion, roughly chopped A handful of coriander 1 tsp salt 1 lime, juiced METHOD: 1. Preheat the oven to 190c and line 3 baking trays with baking sheets. Place the peppers on the top rack of the oven and cook until golden. 2. Using a mandolin, slice the sweet potato to 2mm thick and lay out onto the baking tray. Dont overcrowd the chips or they wont go crispy. Spray with coconut oil and roughly sprinkle with nutritional yeast and paprika. 3. Bake for 25 minutes until golden and the edges are curled up and crispy. Flip once, half way through (but if you cant be bothered then dont worry, they just wont be AS cris-pay as they could be) 4. Meanwhile, saut the corn in a frying pan with ghee, salt and paprika until soft and set aside. In the same pan, add the coconut oil over high heat and once the pan is hot, crack the 3 eggs into the pan and turn to medium heat. Cook for 3-5 minutes until the egg whites are no longer translucent. 5. While the eggs are cooking, slice up the avocado, red onion and spring onion ready for plating. 6. When the peppers are golden, remove the green top and place them in a food processor along with the other salsa ingredients and blitz. I dont blitz mine too much as I like to keep it chunky. 7. When the chips are finished, pile them up onto a tray or plate and season with salt. Then top with the eggs, avocado, corn, red onion, spring onions and serve with red salsa! YUMMO!!

I have created the ultimate cheats ONE-PAN CHICKEN CURRY which is easy, fuss-free and the perfect alternative to the usual curry that takes a lot of effort or is store bought and loaded with vegetable oil. RECIPE:... Serves 2 4 chicken thighs 200g Japanese pumpkin cut into 2cm cubes 1 red capsicum cut into 2cm cubes 1/2 an eggplant cut into 2cm cubes 1 zucchini, cut into rounds 1 head of broccoli cut into florets 300g button mushrooms, cut in half (or keep them whole if they are quite small) 1 bunch of broccolini, woody ends removed 1 brown onion, cut into wedges 4 Tbsp curry powder 220ml can of full-fat coconut milk 1/2 cup of bone broth (can omit) salt and pepper to serve coriander micro herbs to serve or fresh coriander METHOD: 1. Preheat the oven to 190c. Place all the veggies in a baking dish and place the chicken on top. Sprinkle with the curry powder and cook for 25 minutes. 2. Remove from the oven and add the coconut milk and broth and mix through the veggies. Add the broccolini and return to the oven for another 15 minutes. 3. Season with salt and pepper and serve with some coriander micro herbs (or fresh coriander). Voila! ENJOY

15.01.2022 Wild Orange and Rhubarb Chia Porridge Not only does this kinda taste like an orange and poppy seed muffin (YUM!!!), but its full of magnesium from the hemp protein and chia seeds which helps to sooth sore muscles and reduce stress. Magnesium is needed for over 300 biochemical reactions in your body so you really cant get enough of it, but it can become depleted when you are stressed, and the catch 22 is that when you are magnesium deficient, it stresses your body out,... and then your body depletes your stores even more! And with our soils being so depleted, we need to consciously eat more magnesium wherever possible. If you dont have wild orange essential oil, dont fret, just use organic un-waxed (if possible) orange zest instead. Pure wild orange essential oil (which is just a really concentrated oil from the zest of an orange) is uplifting, energizing and the oil of abundance! It also makes everything taste amazing! RECIPE Serves 2: 1 bunch of rhubarb, red part finely sliced knob of coconut oil 12 cup water 1 Tbsp cinnamon powder 1 tsp pure vanilla bean extract (can be found in Woolworths) 12 cup chia seeds 1/3 cup flax seeds 12 cup shredded coconut 200ml water 200ml full fat canned coconut milk 2 Tbsp cinnamon 2 drops wild orange essential oil 14 cup hemp protein METHOD 1. In a small fry pan, heat the coconut oil over medium/low heat and saute the rhubarb, water, cinnamon and vanilla bean for 20-25 minutes with the lid on. 2. Once the rhubarb is nearly finished (soft and mushy like puree), combine the chia seeds, flax seeds, coconut, water, coconut milk, cinnamon, orange oil and hemp protein into a saucepan and allow to cook over medium-low heat. Cook for about 15 minutes until the liquid is absorbed. 3. Split between 2 bowl and serve with the rhubarb. Add a drizzle of rice malt syrup if you desire. ENJOY!

11.01.2022 5 tips for staying sugar-free during work days and exam times: 1. GET A GOOD NIGHTS SLEEP. When you are tired, you tend to reach for the unhealthy foods. How appetising does a bowl of pasta, or a curry with lots of rice sound when youre tired? Good right?? Well, it might leave you feeling heavy, bloated and a bit foggy in the brain so try to avoid that. Instead, choose one of my zoodle recipes or my tastes like katsu curry that provide the same amount of comfort with a l...ot more nutrients. 2. EAT A FATTY BREAKFAST. If you dont eat breakfast then answer this do you tend to overeat later in the day and have lots of cravings?? If the answer is yes, then you need to eat breakfast. Those that skip breakfast make up (and over) for it later in the day and in the evening as they are ravishing and will reach for just about anything (and it tends to be unhealthy!). Try making any of my breakfasts for some rocket fuel for your day. Itll boost your cognitive function and help to keep your blood sugar levels at bay so you wont crash in the arvo. 3. NEED A SNACK? CHOOSE FAT If you are feeling like a munch, then munch wisely. Dont tell yourself you cant have a snack if you just want a snack because that will only make you want it more. Instead, snack smart. Have fat with your snack in the form of nuts, nut butter, cheese, butter, avocado, coconut etc or make one of my Fat burning brownies because they are so filling and will satisfy all your cravings! 4. DENSE OUT YOUR MEALS Basically, dont leave any room in your stomach for a midnight snack attack of sugar loaded crap. Leave the table feeling full so load your plate up with veggies, olive oil or other healthy fats and some protein. 5. GIVE YOURSELF SOME TIME OUT. Recharging your battery doesnt make you weak. If you want peak performance you also need to recharge your battery so that you can actually function! Have a 5-10 minute meditation, put your feet up the wall for 10 minutes, go for a walk outside around the block or lay in the sun for 10 minutes. Doing this doesnt mean that you are slacking off it actually makes you more way productive!

Much of what it says in not the truth and we just need to learn to observe the truth and recognise a specific thought or judgement as only a thought. You can question your thoughts (is this true?) or just choose to let it pass without giving it much attention at all. Try to be present, scan your body for what you truly want. Sometimes you do just want a bag of chips, but MOST of the time, you need a hug, a bath or a better night sleep.
