25.01.2022 CRISPY CHICKEN POKE BOWL . . A delicious and nutritious meal for any night of the week, and a great way to add in more veggies! For good gut health, try to up the amount of plant foods you eat, and aim for 20-30 each week! You'd be surprised how many you can fit into a meal like this .... . . INGREDIENTS (Chicken): 2 x chicken breasts 1 x egg Panko bread crumbs Curry powder Salt and Pepper . . . Pound the chicken fillets to an even thickness of approx. 1 cm. Coat the chicken fillets on both sides in flour seasoned with salt, pepper and curry powder. Then dip them into the beaten egg and, finally into panko breadcrumbs. Fry the chicken in Extra Virgin Olive oil for approx. 5 minutes on either side and leave to drain on kitchen paper to get rid of excess fat before slicing them. . . 12.01.2022 HOMEMADE NACHOS . The perfect weekend dinner when you're feeling like something a bit different! . .... INGREDIENTS: DIY Chips: - 4-6 x RYE Mountain bread wraps - Olive oil - Paprika - Salt . Mince: - 500g turkey mince - 1 x brown onion - 4 x dessert spoons of tomato paste - 400g of Kidney Beans - 1 x chopped onion - Cumin - Paprika - Chilli flakes . Toppings: - Grated cheese - Cherry Toms - Shallots / Coriander - Greek yogurt - Homemade guacamole . METHOD: 1.) Dice onion and cook in pan over medium heat with small amount of olive oil. Once brown add turkey mince and cook for 5 minutes. When turkey mince appears to be cooked add tomato paste, paprika, cumin and chilli flakes until your preferred spice threshold . 2.) Cut mountain bread into triangles and lightly coat in olive oil, salt and paprika. Place in oven on high. (Watch closely so they dont burn - they dont take long) . 3.) Assembling the Nachos: Layer chips, filling and grated cheese. Put back in the oven until cheese is melted.
