21.01.2022 *LENTIL GOOLASH* Something this simple can be so delicious, yet also so nutritionally valuable. This simple recipe will supply the body with the right mixture of enzymes that can allow a higher digestion of nutrients. This combination allows the body to absorb Proteins, Iron, Zinc, Vit C, E & Bs, Antioxidants, Dietary fibres and much more!! Recipe: Firstly soak 2 cups of Lentils over night in a jar of water.. ... The next day chop a large Red Onion in quarters and fry with 1 tbsp of Black Mustard seeds and 2 tbsp of Coconut Oil on a Medium Heat. When they begin to soften add a handful of Sultanas, a big tbsp of grated Ginger, a pinch of ground Cinnamon, and a tsp of Paprika. Mix and fry for a minute before adding the pre soaked and strained Lentils. Whilst mixing, continue to add 4 fresh tomatoes that have been quartered, a big pinch of salt, 3 cups of water and a big handful of cut up parsley.. and simmer on low for about an hour. After cooked, serve on a bed of coconut rice, with a dob of greek yogurt on top and a squeeze of lemon if desired <3 While waiting maybe you could do something nice for a friend, family member or lover?
