25.01.2022 Wish you could smell these! Fresh cinnamon & fruit bread buns baking smell amazing, worth the effort. Made a batch of Laucke Spelt bread flour and yeast, with 2 eggs, grated ginger, milk and the soaked fruit plus tea & spice liquid and olive oil . Aussie dried fruit( raisins, sultanas,currants) tea-soaked, with chia seeds, cinnamon and vanilla. So tasty! #healthwatchnutrition #lockdownlardermelbourne



24.01.2022 Gorgeous colour in these Crimson Pearl potatoes(Spud Sisters ) and pumpkin! Immune-supportive and health-protective veg with our dinner, roasted some the night before, added to more tasty photochemical rich veg options. Served with marinated protein( tenderises & aiding digestion but may protect against carcinogens forming during cooking- rosemary, lemon juice and zest, oregano, garlic tops, EVOO) so simple but super tasty! 23.01.2022 Now ThIS broad beans & leafy veg side dish was super tasty and so nourishing! Thanks @Heike for the recipe idea! Fresh broad beans, leafy greens, garlic, parsley & thyme, pepper and salt, cooked in coconut milk! Pulled up a couple of beetroots to make some relish so used the leaves for dinner with purple cabbage and the rest! Yum! A rainbow on the plate!

17.01.2022 I learnt how to boil an egg from Siri! Didn’t know I’d been doing it all wrong! haha Once the water is boiling turn off the heat, add the eggs, pop the lid on and wait 10 minutes(for a soft yolk). My late lunch of seasonal asparagus, pan tossed with extra virgin olive oil, turn off the heat then add a spoon of miso, toss to coat. Served with a grind of pepper - simple and delicious! ... 16.01.2022 ‘Fish and chips’ nutritionist-style Not the best photography but easy , cheap & delicious! Aldi salmon (on special) with with roast cauliflower and sweet potato( family had purple skin spud wedges also), grilled asparagus and salad with a good sprinkling of dill , grind of black pepper, EVOO and lemon juice( also added a dollop of homemade tartare for a treat!). Roasted the veg while on a beach walk, quick salad cook the fish - so tasty! Done! #healthwatchnutrition

16.01.2022 Beautiful blooming Bottle Brush! Brewed up a tea from the leaves and blossoms ( Callistemon viminalis ) after reading it may be an Indigenous recipe for a stimulating energy drink(flowers only also an option)! The antioxidants thats give the flowers their colour and their sweet nectar combined with the eucalyptus- like leaf is a unique flavoured drink(iced may be nice option). Apparently there may be chemical compounds beneficial for cognitive health also. Nice to try for a change anyway, I took on the challenge! 13.01.2022 Here’s something cheerful to find during #lockdown! How cute is the heirloom watermelon radish colouring, from our veggie garden( note don’t taste like watermelon) ! Looking forward to harvesting more and trying them different ways( pickled, salads, roast and fried). I’ve kept the younger leaves to wilt like spinach also). 13.01.2022 Okay our last lockdown baking Carrot cake oat & calendula muffins with cream cheese icing. Inspired by @jo_armes Made with 150g rolled oats whizzed to flour, 2/3 cup coconut sugar, 1/2tsp nutmeg & cinnamon, ... 2/3 cup EV olive oil, 2 eggs, 2 heaped cups (2 large carrots) grated AND i added petals of 5 of our calendula flowers I dehydrated 1/2 filling buttered muffin tins then bake 180C for about 18 minutes, edges start to crisp and tops bounce back if pressed gently. Icing from 250g philly, 2 spoons butter, splash of vanilla extract and dash of real maple syrup to sweeten slightly, whip up and pipe on or spread a dollop on with a knife. 12.01.2022 Made a delicious drink today - an infusion of calendula flowers, fresh ginger, lemon peel and juice with fresh mint(thanks @healthfoodlover for the idea of calendula with lemon balm & ginger). 10.01.2022 Lemons, lemons, lemons! Besides adding lemon to hot drinks, squeezing on protein to assist digestion, in dressings and marinades, today I made a lemon slice! Adapting a recipe by added almond meal and desiccated coconut to the biscuit base mix(to wholemeal flour, maple syrup, vanilla and coconut oil/ghee). Top layer was lemon juice & zest, eggs, pot-set yoghurt, maple syrup and spoon of flour. Tasting got the thumbs up, will firm up more in fridge more like cheesecake also. 09.01.2022 ‘Banana Coconut Bread’, more like bread less like cake, tasty toasted for breakfast with a cuppa. High in fibre, good mix to support gut health and satisfying protein content (including fermented nutritious buttermilk)AND used up some old fruit from the drawer . I made this with spelt flour, a few spoons of green banana flour(not sweet, no banana taste btw, excellent for prebiotic resistant starch), coconut flakes whizzed up to fine/desiccated, 3 small ripe bananas( we...re frozen then fridge died ,so we got a new fridge and banana bread ), I swapped in homemade (local Granny Smith apples from Archies Creek) apple sauce instead of 300g sugar, Aldi buttermilk( swapped in yo use up, also I had no coconut milk), eggs, cinnamon, vanilla and nutmeg. Not too sweet but I liked it like that! ( got sweeter option you could use coconut sugar, honey or maple syrup for the apple sauce or bigger bananas ior use sweet apples but tasty! #healthwatchnutrition See more
