22.01.2022 Who’s keen for some weekend baking? Leaving you for the weekend with my very popular Vegan Orange and Almond cake. It is one of my most recreated recipe so you will want to save this recipe! I wish you all a beautiful weekend! Mine will be spent with family and friends for a birthday! I can’t wait for next week to arrive already and for my cookbook to be launched! . I hope you will enjoy this recipe below. Make sure to save it! And to make it GF use some 1 for 1 Gf flour... blend. . VEGAN ORANGE ALMOND CAKE Ingredients: 1 cup of flour cup of almond meal 2 tsp of baking powder cup of sugar cup + 3 tbsp of non-dairy milk cup of fresh orange juice 1/3 cup of melted coconut oil 2 tbsp of flaxmeal 1 tsp of vanilla essence zest of 1 orange 1 tsp of apple cider vinegar Steps: 1. Pre-heat the oven to 180 degrees Celsius and line an 8inch cake tin with a circle of baking paper at the bottom. 2. In a bowl mix the dry ingredients together. 3. In a separate bowl mix with a whisk the squeezed orange juice, plant milk, melted coconut oil, orange zest, apple cider vinegar and vanilla essence. 4. Pour the liquid ingredients in the flour bowl and fold gently with a spatula until well combined. 5. Pour in your cake tin and place in the oven to cook for 45 minutes at 180 degrees. 6. Leave to cool on a wire rack and spread some orange marmalade on top for a simple glaze. 7. Keep in an airtight container. #vegan #cake #vegancake #orangeandalmondcake #dairyfree #eggfree

Vegan Sheese Savoury Muffins Makes 6 1/2 cup buckwheat flour 1/2 cup polenta 1/2 cup chickpea flour 1 tsp baking powder 1 cup @sheese_australia Grated Mozzarella Style Sheese 3 tbsp olive oil 1 cup grated zucchini 1/2 cup sundried tomatoes 3/4 cup water 1/2 tsp salt 1/2 tsp onion powder 1/2 tsp garlic powder 1 tsp dried Italian herbs 1. Preheat your oven to 190 degrees and line a muffin pan with muffin cases. 2. In a bowl combine the different flours, baking powder then add the grated Mozzarella Style Sheese and the grated zucchini and chopped sundried tomatoes. 3. Add in the dried herbs, garlic and onion powder. Combine and add the olive oil and water. 4. 20.01.2022 Dreaming of summer with this Mango and Peach Vegan Crumble using the latest @bonnemaman_au Mango and Peach conserve. If you are currently at the end of summer you need to make this asap! And if you like me is waiting for summer you can make it using frozen mango and peaches or save it for this summer! Recipe below and on my blog! So simple and delicious! . Peach and Mango Crumble ... 300gr peaches sliced (fresh or frozen) 300gr mango diced (fresh or frozen) 3 tbsp Mango Peach Conserve by Bonne Maman 1 tbsp arrowroot powder Crumble topping: 1 cup rolled oats 1/2 tsp cinnamon powder 1/3 cup coconut sugar 1/2 cup almond meal 3 tbsp melted coconut oil. 1. Preheat your oven to 180 degrees Celsius; 2. Thaw or dice your fruit and combine in a bowl with the peach and mango conserve, arrowroot powder and spread at the bottom of your crumble dish. 3. In a bowl combine the rolled oats, coconut sugar, cinnamon, almond meal and melted coconut oil. Spread on top of the fruits. 4. Place in the oven for 20-25 minutes at 180 degrees Celsius. Serve with vegan coconut yogurt or coconut ice cream. I hope you like this one! It is honestly my new favourite crumble! I used frozen fruits as it is too hard finding peaches and mangoes in the shop at the moment and they worked really well. 15.01.2022 Lately I have been loving making myself this Tofu Scramble for lunch. Packed with protein, iron and lots of veggies it is so tasty and quick to make! Have you tried my tofu scramble? You should try it asap! Here is the recipe! Make sure to save it! Ingredients 1 brown onion 2 cloves of garlic... 1/2 punnet of cherry tomatoes 1/2 cup baby spinach 300 gr classic tofu or silken 1 tbsp nutritional yeast 1/2 tsp dried Italian herbs 1/2 tsp turmeric powder (optional to make it more egg like) 1/2 tbsp soy sauce or tamari or sub for coconut aminos 1/2 tbsp olive oil 1 tsp garlic or onion powder vegan parmesan or oregano leaves to top. Instructions Dice and cook your onion and garlic in a pan with a bit of olive oil until cooked; Add in the sliced cherry tomatoes and baby spinach and cook for a few minutes; Add in the classic tofu and scramble with the back of the spoon. Mix it around and add all the seasonings. Cook for 5 minutes stirring it until it looks scrambled. Don’t forget to double tap and save this post! . Vegan Blackcurrant Jam Financiers Muffins... Makes 6 financiers 1 cup almond meal 1/3 cup self-raising gf or wholemeal flour 3 tbsp maple syrup cup nut milk of choice cup Bonne Maman Blackcurrant Conserve 1 tsp vanilla essence 1 tsp almond essence (optional) 2-3 tbsp almond flakes 1. Preheat your oven at 180 degrees Celsius; 2. Line a muffin tray with paper cases; 3. In a bowl combine the almond meal, flour, maple syrup, vanilla essence, almond essence and nut milks. Stir to combine well with a spoon. 4. Add in the Bonne Maman Conserve and stir slightly (just once or twice)- don’t blend the jam in the dough. 5. I used to absolutely love a New York cheesecake with the raspberry coulis and I am so glad I got to recreate this but vegan! And this recipe is cashew free! You can find @sheese_australia original creamy sheese at your local @woolworths_au in the vegetarian chiller Make sure to double tap and save this rec...ipe! . Vegan Mini New York Style Cheesecakes Makes 6 mini cheesecakes Crust: 125gr vegan biscuits 1/4 cup melted vegan butter Cheesecake: 500gr @sheese_australia Original Creamy Sheese 1/2 cup icing sugar 1/4 cup corn flour 1 lemon juiced 1 tsp vanilla paste 2 tbsp maple syrup 1/2 cup raspberries fresh or frozen 1. Preheat your oven to 180 degrees Celsius; 2. Line a muffin pan with muffin cases or alternatively use a silicon muffin mould. 3. In a blender or food processor, process the biscuits until fine. Combine in a bowl with melted vegan butter. 4. Press down 1 tbsp of the biscuit crust in each muffin mould. 5. For the cheesecake filling, combine in a large blender or food processor or alternatively whip with a stand mixer the vegan original creamy Sheese, icing sugar, corn flour, lemon juice, maple syrup and vanilla paste. 6. Spoon the cheesecake mixture on top of the biscuit crusts and bake in the oven for 30 minutes at 180 degrees Celsius then leave to cool and set in the fridge for at least one hour. 7. Heat your raspberries up on the stove and mash with a fork. 05.01.2022 NEW RECIPE: Vegan Spring Asparagus Quiche (Tofu-free) I felt like making a new quiche today and decided to make it with chickpea flour instead of tofu. This was such a delicious meal! I will make it again that’s for sure! So I recommend you save this recipe too! I will also pop it on my blog! Happy Saturday! . Vegan Asparagus Chickpea Quiche Homemade crust or use store bought puff pastry... 1 cup chickpea flour 1 cup water 3 tbsp garlic infused olive oil/ or plain virgin olive oil 3 tbsp nutritional yeast 1 tsp onion powder Pinch of turmeric Pinch of black salt (kala namak salt optional) Salt Pepper 1 bunch of asparagus Cherry tomatoes 1 tsp thyme 1. Preheat the oven to 80 degrees Celsius 2. Line a tart pan with baking paper and spread your crust. 3. Blind bake it for 5 minutes. 4. In a bowl combine the water, chickpea flour, olive oil, onion powder, nutritional yeast and the turmeric and black salt. Whisk together. 5. Pour ontop of the crust then add the fresh vegetables. 6. Place in the oven to cook for 40 minutes at 180 degrees Celsius. 7.
