21.01.2022 HOME BREWERS - Causes of Mould While Mould is rare in a kombucha scoby, it can occur when things are not quite right. Causes of mould can include: . Temperature - Liquid temperatures below the optimal range (23-29 degrees Celsius for us in Aus) can cause bacteria to become sluggish and prevent the acids to develop thus allowing mould to grow. And while cold can be an enemy, to much humidity can cause wild bacteria and yeast to grow and foster mould. .... Starter Liquid - Not enough starter liquid causes the batch not not fully acidify resulting in the growth of pathogens. Make sure you don’t skimp on quality STRONG starter. . Poor quality culture - if you get a scoby that is not from a trusted quality source or was from a refrigerated, frozen or dehydrated scoby this can also encourage mould. . Contaminated Environment or Ingredients - Air borne mould in your house, some flowering plants and poor quality ingredients all can contribute to a contaminated culture. . Over the next few weeks, I’ll teach you how to spot Mould and how to prevent it so you can have a healthy culture producing a beautiful functional drink. .
