25.01.2022 I made some really yummy pancakes this morning, carb free! There great for breaky with pure maple syrup on top or some fresh strawberries .... 1 cop of almond meal, 3 egg whites, 1 teaspoon vanilla, 1/2 teaspoon cinnamon, 1/2 cup water or almond milk.... Combine all ingredients , mix well. Spray a not stick pan with oil and heat. Add tablespoons of mixture , cook for a minute or so , turn over and cook until slightly browned. You probably only need 2 of these for breaky as they are very filling , it's also nice to have just 1 in-between meals for an energy pickup .x



25.01.2022 The recipe Iam giving today is a lovely low fat and healthy chicken dish , you can get 2 course from the one pot, first a soup then the main . Put a whole chicken in a pot , cover with water and place on the stove bring to boil, then reduce to simmer, add 4 medium halved carrots, 3 stalks celery halved, 2 parsnips quarter, 4whole cloves garlic,1/2 cabbage roughly chopped, a couple of handfuls of green beans ,2onions quartered, 6 baby potatoes. What ever other veggies you lik...e, chopped parsley , salt and lots of Black pepper,let this cook on simmer for a couple of hours,remove chicken and veg , keep warm, add to the stock ,some rice ,or small pasta , sometimes I like to add a beaten egg and some parmaesan. Soup done! Now remove skin from chicken and break into pieces and place onto a platter , place veggies on the side. Now make a nice vinegerette, from Dijon mustard, crushed garlic , chopped parsley, lemon juice, olive oil , salt and pepper,and pour all over the chicken and veggies. Lots of crunchy bread and you have a great hearty meal ! X See more

24.01.2022 It's today , 5 months ago that my butiful nanna passed away . I have so many precious memories that will be a part of me forever. Nan loved to cook , especially bake ,and being a mother of 14 ! Nanna of dozens and great nan of many, I think everyone of them will always remember with love not just her butiful warm hugs but her cooking ad well . What comes to mind with me the most was when we would come for Sunday dinner, with so many hungry mouths to feed , she always managed ...to have to feed all of us, roast dinners , butterfly cakes, bread and butter pudding , plum jam , green tomato pickles,the best roast potatoes in the world, rissoles in onion gravy. All old fashioned favourites .i miss sitting around the table drinking copious amounts of tea, sharing naughty jokes and talking about old times, I miss her soft skin, her warm hugs and her kind words. She is a part of all of us, she has instilled upon me her importance of family and her love of cooking, these things I will treasure forever x See more

22.01.2022 What a lovely day I've had, lazing around with my hubby, having a little nap on the couch , and now having a nice cinzano, while waiting for dinner to cook. The house is warm and cozy and smells delicious with roast chicken , pumpkin , and veggies in white sauce in the oven , just waiting for the rest of my family to get here to enjoy it together .x



20.01.2022 Raspberry choc- puddings..........I recently made this desert for Sunday family dinner, it's so yummy and really easy to make...500 gms frozen raspberries , 1/2 cup sugar,100gms butter, 4eggs separated ,100gms dark choc melted,1/3 cup self raising flour,2tbs cocoa powder,3/4 cup almond meal,2/3 cup fresh bread crumbs ,100 gms dark choc roughly chopped,2tbs icing sugar.preheat oven to 180 , place 8-10 raspberrys into the bottom of 8 tea cups,reserve 1 tbs of sugar ,beat butter... and remaining sugar until pale and creamy, add egg yolks, beat well,fold in melted choc,flour,cocoa powder,almond meal,breadcrumbs and chopped choc.Beat egg whites until soft peaks form, gradually add reserved sugar, beating until combined, fold into choc mixture.divide mixture into each of the tea cups, place cups in a large baking dish, fill dish half way with boiling water, bake for 35 minutes, or until cake is set . Place remaining berries and icing sugar in blender , blend until smooth, sieve to remove seeds. Serve this and vanilla ice-cream with the pudding . Believe me when I say your family and friends will love you forever if you bake this for them :) See more

19.01.2022 My stuffed tomatoes and risotto

18.01.2022 One of my family's favourite things to eat is a yummy cake that's made of left over stale bread. It was a recipe that my butiful mother inlaw "mimi"passed on to me. Mimi passed away from ovarian cancer a few years ago . She was a great inspiration to me. Mimi actually had a great influence on the way I cook and I have so many lovely family recipes that I treasure and that my family treasure .For this recipe you need a loaf of stale bread, I usually keep the crust and left ove...r bread in the freezer until I have enough. Break the bread up into pieces place in a large mixing bowl , pour over some milk( about 1 litre, allow to soak for 10-20 mins. Then squeeze out milk ,add 2 eggs , 1 pkt dried fruit mix, 3 teaspoons cinnamon , 1/2 cup sugar, 2table spoons cocoa , add 1/3 cup almonds if desired , mix well , pour into greased cake tin, bake at 180 degrees for aprox 35/40 mins . My family love this toasted with jam or nutella for breakfast .its a moist cake that keeps for about a week . And it's so yummy! X See more



18.01.2022 This is for my butiful sister, I think she had phoned me at least 20 times for this recipe, it's so simple. It's always popular at raiola BBQ celebrations xx. Green bean salad... 1 kilo if green beans that have been blanched in salted water, add I finely diced red onion , 2cloves crushed garlic, 1/2 cup chopped parsley, make a vinegerette of 2 tablespoons of Dijon mustard, 2 tablespoons olive oil , 3 tablespoons red vinegar, salt and black pepper mix well pour over bean mixture , sometimes I add a can or two of cannalini beans or a diced red capsicum . X

17.01.2022 Sunday is my favourite day of the week , I sit around with my hubby for a lazy Sunday breakfast , and eventually contemplate what we will do for the rest of the day. Sunday night is usually a family roast, the one night which we manage to all get together . I think in our busy lives its important to set aside at least one night a week to share a meal with our family. To all my single friends who are not always in contact with there family, create a traditional weekly dinner w...ith your friends, it doesant take much to throw a leg of lamb and some veggies in the oven , open a bottle of red and you've got yourself a great family dinner .Great conversations and ideas have come up while sitting around the table, it's where my husband Christian proposed to me, on a Sunday night while sitting around the family dinner table , not very romantic I know , but it was while it was doing what I like doing the most and that's sharing Sunday dinner with my family ! 14.01.2022 Doing what I love doing most , sharing with family and friends. This is my dining room table , I had it built to seat up to 25 people ! I absolutely love it. Today's recipe is something I love too , I get asked for the recipe all the time , it makes a butiful entree or just for everyday sandwiches and is really simple to make....chicken terrine . 600gms chicken thigh meat ,400gms minced chicken ,1tablespoon chopped shallots, 1clove garlic,2teaspoons salt,2tabkespoons chopped ...fresh tarragon,200gms chorizo chopped,2tablespoons duck fat,ground black pepper,12 slices bacon, rind removed.combine minced and diced chicken,shallots, garlic,salt,tarragon,chorizo,and duck fat in a large bowl, mix by hand until combined, season with pepper.arrange bacon slices in a 1litre terrine mould,with the ends hanging over the edge, put the chicken mixture into the mould, fold over the bacon and press down tightly. Cover with aluminium foil. Put mould into a roasting tray and add water to reach half way up the side, put in a160 degree oven and cook for 80 minutes. Allow to cool after removing from oven, put in fridge with a heavy weight on top and leave for24 hours. Slice and serve with crunchy bread, cornichons and Dijon mustard . X See more

14.01.2022 Shane delia (owner of maha restaurant and renowned chef ) is a client and friend of my husband Christian , he recently gave me his recipe for slow cooked lamb , it's 10 o'clock in the morning and I just popped in the oven to have for dinner tonight , I will share the recipe tonight with you after I've tried it for dinner, can't wait to see the results:-)



14.01.2022 My son Shane is a chilli freak! And especially loves Thai food,and may I say he is pretty good at cooking it to! This is a favourite of his , Red Duck Curry....10 dried long chillies, softened in warm water for10 mins and drained 2-3 fresh small chillies,1 sliced lemongrass stalk,2cm piece ginger sliced, 1 cm piece fresh turmeric sliced,7 garlic cloves , 1 shallot sliced , rind of 1 lime,1 tablespoon shrimp paste,125 mls water, vegetable oil ..all the above ingredients are f...or the red curry paste.now you also need 400 mls coconut milk , 500 gms roasted duck meat, broken into large pieces,1tablespoon fish sauce 5 tinned lychees and 1 tablespoon juice,6bite sizes pieces fresh pineapple 200 gms egg plant cut into large pieces,1long red chilli,diagonally sliced, 6 kaffir lime leaves torn,50gms Thai basil torn.......put the curry paste ingredients in a blender and process to a smooth paste, heat a little oil in a pan and fry paste for 10 mins, spoon into a jar.hear half coconut milk over low heat. Add 3 tablespoons curry paste(store rest in fridge) And stir well , cook for5mins or until oil starts to come to surface , add duck,lychees and juice, pineapple ,and remaining coconut milk, bring to boil. Add eggplant and chilli, cook for a few minutes until eggplant is tender, stir in lime leaves, remove from heat and stir in Thai basil, serve with steamed rice This dish will serve 4-5 people x See more

13.01.2022 While on holiday at langkawi I've been given some amazing recipes to try from the chefs here, I hope to put recipes up soon, I had an amazing cocktail today invented by our lovely barman called amiran, he called it langkawi island, consisted of 3 parts midori, 2 parts southern comfort, 1 part vodka, I splash of grenadine ,fresh pineapple juice and lemonade with lots of ice, needless to say after that , a Singapore sling and a bottle of champagne , Christian and I very very happy! Ahh! Your gotta love holidays:))

12.01.2022 Ever since my children where babies they have been involved in some way in the kitchen. before they could even walk they would sit on the kitchen floor with an array of pots and wooden spoons pretending to stir or bang on the pots as if they where drums ( that would be you Dion )singing and dancing with my daughter Jessica would have us laughing hysterically,or having the kitchen look like a hurricane just hit it, when it was just Shane coming up some weird and wonderful expe...riment .One of my favourites is a cake that jess makes, it's a family favourite and always requested for birthdays and celebrations ....Chocolate, fig and hazelnut torte .......600gms hazelnut meal...200 gms dark and 200gms milk chocolate.... 1pkt dried figs...10 egg whites...1 shot of frangellico....half cup suger, Chop figs and chocolate , mix with hazel nut meal and frangellico . Whisk egg whites with suger until soft peaks form , fold into nut and choc mixture . Bake in 180 degree oven for aprox 35 mins or until browned on top. Cool in the tin until firm. Serve slightly warm with a dollop of pure cream. so yummy ! See more

11.01.2022 Christian favourite meal is lasagne for entree,then roast beef with broccoli in white sauce and chips, here is how I make it. Lasagne ... A batch of bolognaise sauce ( posted earlier on page) white sauce, lasagne noodles( I like to make my own ,but pre- made is fine) parmesan cheese , butter. To make the white sauce , melt 100 gms of butter in saucepan , add 1 crushed garlic clove, add 2-3 tbs of plain flour, mix to a paste and cook , stirring constantly for 1 min, gradually ...add milk stiring constantly until sauce thickens( aprox 1 ltr of milk) add salt , pepper , grated nutmeg and 1/2 cup of parmesan cheese , stir to combine. Place a layer of bolognaise sauce in a baking tray,cover with lasagne sheets, cover with white sauce , then bolognaise sauce, then parmesan . Keep doing layers in this order until you finish with bolognaise sauce on the top , cover with lots of Parmesan and dot with butter. Bake at 180 d for aprox 40-45 mins or until pasta is tender..... Broccoli in white sauce, ... Place in a saucepan broccoli flowerettes, 1 clove garlic, 1 bay leaf, 1 sprig fresh thyme , 1 tbs olive oil,fill with chicken stock until half way,cover with a tight lid, and cook until just tender. Aprx 5-10 mins,...place a thin layer of white sauce (as above) on bottom of baking dish,add drained broccoli , cover completely with white sauce, sprinkle with Parmesan cheese, and fresh breadcrumbs,bake at 180 until nice and golden. 10.01.2022 Well it's been a while , and few friends have asked for some new recipes , so tonight I cooked a great vegan meal and thought I would share it. It's a really yummy chickpea burger and veggie stack.for the chickpea burgers first of all you need 3 tins of chickpeas, 1 large grated carrot ,I grated red onion, 1 clove crushed garlic, corn kernels off of 1 cob of corn, salt pepper, a bunch of fresh coriander , a small fresh chilli finely diced. Mush the chickpeas up roughly add al...l the other ingredients , mix well , shape into patties,about 1 cm thick , fry in a little olive oil for aprox2 mins on each side.this should make about 8 patties. Next step is the veggies, I first grilled on a hot plate half a butternut pumpkin, finely sliced, I eggplant finely sliced, and 1 red onion finely sliced , (or what ever veg you fancy)grill until browned.dress the veggies with, olive oil , balsamic vinegar, crushed garlic and salt and pepper, throw in a big handful of fresh coriander. To assemble put 3 rounds of tomatoe on a plate, season, now place a handful of rocket on top, now put a burger on top, now a big spoon of veggie mix, some char grilled capsicum, and to finish another burger. For a non vegan touch, add some bocconchini cheese to the veggie mix, some basil pesto and a fried egg on the top . I hope you give it a try , it's really yummy x See more

09.01.2022 Iam missing butiful langkawi, the butiful hot weather,lazy afternoons laying in the sun,and the yummy Malaysian food.in langkawi they have the most incredible seafood and my favourite dish was fried snapper with tamarind honey sauce . Omg! This fish is amazing , iam really thankful for the chef giving me the recipe. Ingredients: 1.8 kg whole red snapper,100gms corn flour,20gms salt,30gms black pepper crushed,30gms ginger, 30 gms garlic, 30gms coriander :tamarind honey sauce:... 1 litr tamarind juice,300mls honey,300 gms fish sauce,200gms palm sugar,600gms sugar,100gms lemon grass chopped,100gms ginger chopped,20gs salt.....boil and simmer the tamarind juice with all the other sauce ingredients until it reduces by half. Marinate the fish with salt and 30 gms of chilli powder, pepper, garlic , ginger and coriander , coat the fish with the flour and deep fry until golden. Arrange snapper on plate and pour tamarind honey sauce on top of fish, See more

I think everone knows how to make spag bol, but this is my recipe that eveyone loves xxx First of all pour yourself a glass of red wine,turn up some music, for me thats pavorotti , put on you apron AND COOK! This recipe is for 10-12 people, but often i will keep half and use it for chicken parma the next night. Ingredients-1kg free range pork mince,500gm jar of tomato paste,700gm bottle of tomatoe pasatta,1 onion,2cloves garlic,400gm tin crushed toma...toes,handful fresh basil or oregano,pinch dryed chilli,splash balsamic vinegar,white wine,2 medium carrots,2 stalks celery,300ml jar cream,salt and pepper,fresh grated parmaesan cheese, 1 kg pasta. method........saute diced onion and crushed garlic until soft,add pork mince and fry until browned , add tomatoe paste cook and stir over low heat for 2 mins, add 1 glass of white wine,pasatta,tin tomatoes, and 2 cups of water, turn up heat and bring to boil.once you bring to boil, reduce heat to a simmer add balsamic,basil,chilli,salt ,pepper,halve carrots and celery,keep on a simmer for 20 mins add cream and simmer for another 25 mis See more

06.01.2022 One of my favourite meals that I enjoy cooking is coq au vin,there are so many different and time consuming ways to make it , but here is my quicker and easier way that is just as yummy, it makes a great impression at dinner parties x This serves 4 ......20 small onions,a few sprigs thyme , 1 bay leaf,50 gms butter, 100gms bacon cut I to strips, 250 gms button mushrooms,8 prices chicken on the bone eg.4 drumsticks and 4 thighs , salt and pepper 30 mls cognac 1tablespoon flour...,400 mls red wine,1 clove garlic,chopped pArsley,2taespoons tomato paste. ....place onions in a saucepan of cold water ,bring to boil,boil for 2 mins. Drain. Heat half the butter and brown onions add bacon and stir for 2 mins, add mushrooms and cook for 5 mins,transfer to a dish. Heat remaining butter in a pan and brown chicken, season with salt and pepper.add cognac and flame the chicken by igniting it,sprinkle flour over chicken. Add wine, herbs garlic and tomato paste, stir well, bring to a slow simmer, cover with a lid and cook for 20 mins, turn chicken pieces over,add onions, mushrooms and bacon, cover and simmer for 15 mins serve with buttery mashed potato and crunchy bread ;) See more

06.01.2022 I've always loved to grow all my own herbs, even in my little house with only a courtyard for a garden , I grow all my herbs in pots , I even have a butiful lemon tree growing in a pot. Fresh herbs are an essential in my kitchen , I love to make fresh herb salads , pestos, etc. here is my recipe for a couple of pestos, I love these because at least you know what's going into them, no nasty preservatives . Basil pesto, first I roast a handful of almonds in the oven for a coupl...e of minutes , I then place them in a mortar and pestal with 1 clove of garlic and a pinch of salt and grind until combined, then grind in 2 cups of basil into a rough paste , add 1/2 cup of grated parmesan and mix, drizzle some light olive oil and mix until you get the consistantsy you like. This can be stored sealed in the fridge for 7-10 days. I also like to use coriander , ginger and chili , for a yummy Thai flavour . See more

03.01.2022 We had Shane delias slow cooked lamb for dinner tonight and it was so good! I did alter the recipe a bit by adding some vegetables to the dish. Here is the recipe,2kg piece of lamb shoulder, 20 cloves of crushed garlic, I tablespoon of sumac, zest of 2 lemons, salt and pepper , water. Olive oil, 1 tablespoon of ground cumin,... Make a paste with zest, garlic, cumin. Salt ad pepper.score the lamb . Rub paste all over . Cover and refrigerate for 2 days. Place in roasting tray w...ith 2cups of water and a little olive oil, cover with foil and roast at100 degrees for 5 hours, Remove foil , turn up temp to 200 degrees and cook for another 1-1 1/2 hours for the last 20 mins add chopped carrot , eggplant, pumpkin, and chickpeas. The meat should just fall apart, with the sauce in the bottom of pan add a 1-2 teaspoons of Harissa .serve separately to pour over meat .serve with cous cous See more

02.01.2022 Last nights dinner was just perfect , very proud of myself! 12 hour cooked lamb with pistachio cous- cous.....first the leg of lamb, cut 10-12 small slits in lamb and insert slivers if garlic into them. Rub with sea salt , pepper, ground oregano fresh chopped rosemary and olive oil . Place in a baking dish pour in 1 cup of dry white wine and zest of1 lemon, cover with foil and bake at 110 degrees for 19-12 hours, 1/2 an hour before its ready remove foil , turn heat up to 160 ...to make it golden and sticky. Remove from oven , allow to rest ,heat oven juices until reduced by half and use as a gravy. Place cous -cous in a large bowl, mix in a little olive oil and salt, pour over enough boiling water just to cover, allow to sit until water is absorbed , fluff up with a fork , add , 1cup chopped Black olives, 1cip chopped parsley, 1/2 cup fresh mint. 1/2 cup fresh coriander , 2 cloves crushed garlic ,1/2 cup chopped pistachio nuts, olive oil, lemon juice,(2 lemons) salt and pepper .break lamb into large chunks, place on top of cous - cous and pour over the sauce. This will definitely will become a family favourite , I already have requests to serve this for Christmas x See more

02.01.2022 My sons fiancé Jessica (jd) always asks me to cook this for dinner ." chicken in cream"so here it is jess ! Next time I come to yours for dinner you can cook it for me, it's my favourite too . Xx This serves 6 people. 4 chicken breast fillets, 2 tbls butter, splash olive oil, 1 clove garlic , 3/4 cup cinzano rosso,salt and pepper, 300 mls thickened cream. Split chicken into 2-3 pieces , melt butter and olive oil in large frying pan , add garlic and chicken and sauté antil ...chicken is just cooked, add cinzano and simmer until reduced by half, add cream and salt and pepper , simmer until sauce is slightly thickened.serve this with lots of crusty bread and a crispy green salad, my kids love this with chips.This sauce is also nice with eye fillet, just add a small tin of green peppercorns to the sauce.To make a nice pasta dish from this, dice the chicken ,add garlic, bacon and mushrooms, and diced leek , sauté till browned , add cinzano, reduce, add cream , reduce, add chopped avocado , and 2 tbsp pesto, warm through , serve mixed through penne pasta or spinach and ricotta ravioli, xx See more

01.01.2022 This is what Iam cooking for dinner tonight .....stuffed tomatoes, this is enough for 12 tomatoes . Slice the tops off tomatoes, scoop out the flesh ( keep this to make into risotto to serve with tomatoes ) sprinkle inside tomato with salt , turn upside down and let drain for 10 mins, place a pinch of bread crumbs in each . Place in a large bowl, 1 kg pork mince, 1 egg, 1/2 cup bread crumbs, 1tablespoon Dijon mustard , I clove crushed garlic , 1 tablespoon mixed herbs, mix we...ll , place loosely in each tomato , sprinkle over with bread crumbs, parmaesan cheese and fresh rosemary . Any left over mince mixture , roll into balls and place into baking dish with stuffed tomatoes. Sprinkle with olive oil and dot with a little butter. Bake at 200 dg for 35-40 mins. For the risotto , sauté 1 chopped onion and 1 clove garlic in olive oil, add chopped tomatoe flesh and sauté until a sauce like consistantcy,add 1 handful of aborio rice per person , cook for 1 min, add hot chicken stock 1 cup at a time, stiring until absorbed and rice is cooked , add 1/2 cup parmaesan , 1tblespoon butter, salt and pepper , and 1 cup chopped fresh basil ,serve with tomatoes, and extra cheese. 01.01.2022 This is for you Chrissy,xxxpumpkin soup, sauté an onion and 1 clove of garlic in a little bit of olive oil, throw in 1 kilo of chopped butternut pumpkin, a pinch of chilli powder and a pinch of nutmeg, pour over enough chicken stock to nearly cover add some fresh basil( a handful, chopped) bring to boil , then reduce to simmer, add atin of carnation low fat evaporated milk, simmer until pumpkin is cooked, add salt and pepper to taste, the puree the lot .xxxx enjoy ps if you wan it nice and thick add a couple of chopped potatoes with the pumpkin x

01.01.2022 When I was a little girl one of my favourite rainy day foods that my mum would make was good old sausage rolls, even today , every time the family gets together mum will whip a batch up and no matter how hard I try I never seem to be able to make them as good as what she does. Love you mum x. 1x 6 pkt of puff pastry, 1kg sausage mince, 1 egg, salt and pepper, 1 finely diced onion, 1 clove garlic,spindle mixed herbs, splash tomato sauce, splash soy,1/2 cup bread crumbs. Mix all the ingredients together ( except pastry,) until well combined. On sheets of pastry place 2cm rows of mince mixture , roll into sausage rolls , cut into size wanted and brush with milk.place on a baking dish lined with baking paper and bake at200 degrees for aprox20-30 mins
