22.01.2022 This week will be dedicated to Mussels...chilli tomato mussels. An excellent all round year dish.... Serves 4 people, and best served with crusty bread or rolls... 1 kg fresh mussels in their shell... 3 small hot red chopped chillies, or 1 teaspoon of crushed chilli I tub of cherry tomatoes, or 400g of crushed tinned tomatoes 3 tables spoons olive oil 1 large finely chopped onion 3 large finely chopped or crushed garlic gloves 2 cups of dry white wine Throughly wash the mussels, carefully removing the beards, without pulling out the meat. Place 2 tablespoons of oil, garlic, onions, 1 cup of wine and all the mussels in a large stove top pot. Place the lid on the pot and allow 5-10 minutes for mussels to open. Stir gently as needed to ensure ingredients don't stick to Bottom of pot. Turn heat down to medium, add rest of wine, olive oil, tomatoes and chillies, stirring all ingredients together gently. Cook on low to medium for another 10 minutes. Spoon mussels and sauce into 4 large bowls, and garnish with parsley. Serve with bread.....ENJOY!

19.01.2022 So, with some beautiful fresh fish...its easy to ensure you retain their fresh salty flavour by using the KISS principle.... A little olive oil on foil, then place the fish on the foil (big enough to wrap the whole fish loosely for an oven tray), place a slice of lemon inside the gutted fish. Add a generous amount of cracked pepper ( or some Australian Chilli salt) and little more oil on the fish. Then place 2-3 more slices of lemon on the top. Close the foil around the fish loosely, including closing the ends. Leave to marinate for 2-3 hours in a cool spot,mind then cook in about 200*c for 15-20 minutes....mmmmmm, love it!
