20.01.2022 Top tips for the Thicken mode This is the perfect mode to use when making savoury or sweet starch-thickened sauces, hot emulsified sauces and desserts and spreads. These recipes have always been easier with your Thermomix but now, you simply place the ingredients in the mixing bowl, select the thicken mode, set the temperature (see Quick tips below) and turn the knob. ... Thermomix will automatically control the cooking time based on the type of ingredients, amount of ingredients and the temperature. Quick tips For starch-thickened recipes set temperature to 100C These recipes are thickened using any type of flour, such as wheat flour, cornflour or potato starch as the thickening agent. Béchamel sauce, Soubise sauce, Custard or Crème patissiére are some recipes using a starch as the thickening agent. For egg-thickened recipes set temperature to 80C These recipes use eggs or egg yolks as the thickening agent, and include hot emulsified sauces, desserts or spreads. Try the Hollandaise sauce, Béarnaise sauce, Orange liqueur zabaglione or the Berry curd in our Thickening with TM6 collection. For hot emulsified sauces use the butterfly whisk The butterfly whisk will incorporate more air into your sauces, creating the perfect egg foam. The whisk is ideal for Zabaglione, Red pepper and paprika Hollandaise sauce or the Choron sauce.

06.01.2022 Unleash your inner chef with sous-vide and blade cover Make even more magic in your own kitchen with sous vide and the new blade cover accessory. Whether in the TM5 or using the Sous vide mode of the TM6, you can wow your friends and family with meat, fish, seafood, vegetables and fruit cooked to perfection every time, using this technique loved by chefs around the world.... Sous vide is a precise, gentle method of cooking where food is placed in a water bath, protected by a food-safe, air-tight bag, and cooked at a controlled temperature. Cooking the food in a sealed bag locks in all the natural flavours and nutritional benefits and also makes for extremely fuss-free cooking. With Thermomix capability to control the temperature in 1C increments, total accuracy is achieved while blade cover protects the sous vide bags. Top Tips Sealing the bags: There are two ways - either manually by immersing heat-resistant zip-lock bags in water to remove the air, or by using a vacuum sealer. When it comes to choosing a method, base your decision on the recipe you’re preparing. If there are liquids in the bag, choose the water immersion method. The vacuum sealer method is most effective for recipes where there is no liquid in the bag. For the water immersion method: Place the food in high-quality, zip-lock bags (not polythene bags). Look for bags made without BPA (Bisphenol A), they're widely available from major retailers. Fill up a sink or large bowl with water and then seal the bag, leaving a gap in the seal of approx. 3 cm. Submerge the bag, leaving the open seal above the water. The pressure of the water will force the air out. Fully seal the bag before submerging completely to ensure all the air has been removed. Clever prep: For the best results, cut your ingredients to roughly the same size and thickness. Season well and place in the bag or bags, laying the ingredients as flat as possible. Flavour enhancing: Marinating tougher cuts of meat tenderises them while also enhancing their flavour. Add some of the marinade to the sous-vide bag and use the water immersion method to seal the bags for these types of recipes.

Place the grain of your choice in the mixing bowl along with water and seasoning, select the Rice Cooker mode and turn the knob. Thermomix will intuitively select the temperature and cooking time for you.... Quick tips Simmering basket replace the measuring cup with the simmering basket when using the Rice Cooker mode. Portion sizes use approx. 50-60 g of rice per portion. Water ratio the ratio of water will depend on the grain you are using, the brand of the grain and the amount of the grain. Start by using the recipes in the Rice and Grains with TM6 collection to familiarise yourself with the water ratios for each grain and then adjust to your own taste. Brown or wholegrain ricesoak - brown rice or wholegrains before cooking. Follow the recipe indications for soaking times.
