25.01.2022 Today is a good day. Lunch was a couple of freshly caught tuna wings straight out of the smoker, thanks to the neighbors. We paired that with cracking the keg of a new coffee, vanilla porter we brewed a while back. Our new umbrellas arrived. And a new website goes live very soon.
24.01.2022 I took this photo a few years ago and i still remember drinking that iced filter after we were done. It was a beautiful Autumn day, just like today, and that pour over was a peachy Costa Rican that we all loved here. In our current range, the gin infusions we're tinkering with go great on ice.

And while we’ve missed seeing everyone it’s given us the room to expand and grow our business, supplying our fresh, award winning coffees all the way along the Surf Coast, into the Otways, Geelong and Melbourne. In the background we’ve been building a unique experience with the fantastic team at Prickly Moses. It’s been a long road but if you’ve visited t...he @apollobaydistillery since opening, you may have seen our logo mounted proudly on the building. As it develops, the Old Apollo Bay Post Office will become the home for local craft experiences. Amazing house-distilled gins, artisan pizza, and an array of freshly roasted coffees from us. 20.01.2022 Firstly we want to thank all of our wonderful clients, the cafes, restaurants, stores and pubs who are all very much friends of Gareth and I here at Hello Coffee. We wouldn’t be here without you and our hearts are with you all atm. Where we can, we will continue to support our wider community of businesses that we supply, and inside our shed we’re still head down over the roaster. We have decided that the roastery will be accessible only to staff and inbound deliveries for th...e foreseeable future. You can still find our coffee in most of the usual places (in take away) and we’re trying our best to keep the supermarket shelves well stocked. For those not in Apollo Bay, please place your orders through our website and we can stock you up via the post. Also, I thought I’d post a couple of pics here for you to see our production process, for those who might not have seen it. We use automated bagging equipment and food grade sealed tins throughout the system so at no point do human hands come into contact with the beans. 08.01.2022 The next edition of Hello Coffee X is up on our online store. Continuing with our current theme of spirit infusions we came across an amazing Elderflower Gin Liqour from our good friends @apollobaydistillery . When we first tasted it at the distillery we knew this would be a candidate for the X range so we paired it with an organic Peruvian coffee and sealed it away for 3 weeks. On first tasting we think this is easily the best one yet. The floral elderflower sits comfortably over the top of the smooth Peruvian coffee and makes an impressively balanced cup. This one will be popular so get in fast as there's only 5kg as usual and please comment with your thoughts. Enjoy! Justin.
