19.01.2022 Like many of you, Ive been doing lots of home cooking in isolation. I thought Id share this childhood recipe thats on my regular playlist. Its so delicious & so good for you, especially on a cold night. Its called the ABC soup because, you guessed it, its as easy as ABC! Pop water/stock in a deep pot with some knobs of ginger (skin on) Roughly chop several onions, tomatoes, carrots, white radish (& any other vegetables you want to eat) and drop into your stock. Pop in s...ome sesame oil, chinese cooking wine (If you have some), white pepper & soya sauce into the stock. Bring to boil and then let it simmer for 1-1.5hours If you want to make it a heartier soup, make some minced chicken balls (marinate minced chicken with sesame oil, soya sauce, grated ginger, finely chopped spring onion) and drop the chicken balls 30 mins into the simmering process. Or to keep it vegetarian, use mushrooms instead for extra nutrients. Season to taste with more soy sauce if necessary. Top with left over chopped spring onions Sit back and enjoy the sweet, savory broth. Ive eaten it all my life and I still love it

06.01.2022 Heres a childhood fav that takes next to no time to make. Its a Malaysian version of a Japanese chawan mushi (a savoury egg custard). Eat with a steaming bowl of rice - perfection! Whip up some eggs (I use 4 large eggs to feed 2) in a measuring cup with some white pepper, soy sauce, sesame oil and a pinch of salt Add water/stock at 1.5 times of the egg mixture (if your eggs come up to 100ml add 150ml of water/stock) and whisk together.... Strain the mixture through a sieve for extra smooth texture or just pour straight into a bowl Pop bowl into a steamer and steam over a mid size flame (not full flame) & leave lid just ever so slightly ajar. Steam for approx 20mins. Its ready when you stick a fork through and its firm-ish (or not liquid) - like the texture of a silken tofu. Serve as is or for a more substantial meal, stir fry some finely chopped enoki mushroom with finely sliced cabbage in some oil, with a dash of soy sauce.
