15.01.2022 Home Pandemic Cooking Project! Cooking cake with edible weeds! Using Warrigal Greens which are lush and beautiful now in the southern Australian states. But other edible weeds can be substituted. Tastes super yummy like a normal cake and looks green! Turkish Lemon Spinach Cake... 3 eggs 1 1/2 cups sugar 1 tsp vanilla 8 cups fresh Warrigal Greens (you need about 1 cup puree) 1/2 cup olive oil juice and zest from 1 lemon (about 1/4 cup lemon juice) 2 cups flour 3 tsp baking powder pinch salt Preheat oven to 180. Grease and flour cake tin. Remove stems from spinach. Puree spinach in food processor until smooth. In a large bowl, beat eggs and sugar until light and creamy. Add vanilla, oil, lemon juice and rind, and pureed spinach until well blended. In a different bowl, whisk together flour, baking powder and salt. Stir dry ingredients into wet ingredients until just combined. Pour into prepared pan. Place in oven and bake for about 30 minutes or until skewer inserted near centre comes out clean. Remove from oven and let cool on wire rack. Top with whipped cream or cream cheese frosting when cooled.

14.01.2022 Wild fennel seeds. Medicinal weeds. Keep the dried seeds in the medicine cabinet for upset stomachs particularly bloating, wind or indigestion. Simply chew 10-12 for very quick relief.

13.01.2022 The Shaggy Ink Cap. Coprinus comatus. One of those nice easy to identify edible mushrooms for the less-experienced forager. Quite common too. The only downside is that, even though it is edible, it can be poisonous if drinking alcohol with it! Not something which affects everyone but worth knowing! .... 11.01.2022 Perhaps the most versatile of the edible weeds dishes. Weeds and cheese pie. A new take on the old Spinach and Cheese Pie. Simply use just about any edible weeds you have available at the time. Really it's so 'yesterday' to go to the effort to grow greens!

04.01.2022 Puffball mushrooms! Sometimes with a stalk and sometimes like a little golfball without a stalk. Yes, edible varieties do exist. But BEWARE! For novice foragers, puffballs are easily confused with deadly poisonous mushrooms like Death Caps when the death caps are very, very young and small, just popping out of the ground. There's a lot to foraging wild mushrooms so learn, learn, learn! ... My new book covers puffball mushrooms. Available at the link below!
