The Game of Thrones bottles are a collection of Diageo whiskies from around Scotland with a diverse range of flavours from sweet and honeyed to smoky and fishy. The entire range is available by the nip (including the elusive and unreleased in Australia Clynelish - by the nip only), and for... bottlekeep! While stocks last. We've only got one of each!

19.01.2022 A cracking new arrival to our shelf and a fairly recent release from Macallan. The 15 year old Double Cask has been aged in a combination of American and European oak oloroso sherry seasoned casks to provide a rich and complex flavour. Dried fruits, vanilla bean, raisins, toffee, dark chocolate and wood spice with a long finish.

19.01.2022 Containing liquid from regions fabled to host the legendary lost city of gold, Eldorado, and the miracle spice touted as the golden child of the nutrition industry is our latest cocktail. The Gold Digger. Peppery blanco Tequila, smoky Mezcal from Oaxaca, green and pungent curry leaves, tumeric, cloves, and lime meld together to create a herbal yet sweet and slightly tart journey, on the road to Eldorado.

18.01.2022 Say peace to our favourite ginger behind the bar! We are sad to report that Brendan has officially moved on this week (to join the military ). He will be sorely missed as he is taking a wealth of whisky knowledge and loads of great banter with him. Unfortunately this also means we will not be open Tuesdays for the foreseeable future as we do not meet the staffing requirements with our licencing to remain open the extra day.

16.01.2022 The perfect cocktail for a secret alley way tryst, or forgetting about the quarantine in Eastern States: the Scofflaw. Scofflaw: A person who flouts the law e.g. drinking during prohibition.... A classic Scotch cocktail - dry, boozy, and rich.

16.01.2022 One of the favourites on our new cocktail list, the Bar Nanna! Rye whisky, butterscotch schnapps, banana puree, lemon juice, egg whites, and chocolate grated on top. Liquid Bannoffee Meringue Pie!

15.01.2022 Make sure to ask the bartender what their picks are, you're sure to try something you may have never considered! Primo Estates La Biondina for example is a blend of white grapes, which most people would skip straight past. The winemakers however, have created some phenomenal flavours!

15.01.2022 The latest addition to our shelves! Glen Grant 15 year old Batch Strength 1st Edition. One of the world's most awarded whiskies, exclusive to the whisky club. This is your only chance to try not only this whisky if you missed out this month, but also one of the only high ABV Glen Grants on the market! Rich with chocolate malt, bright citrus, toffee, and vanilla. The palate has a nice heat to it with brown sugar, stewed stone fruits, and hay like malt. A soft biscuity finish ...with malt and honey. Available by the dram, or one bottle available for bottle keep!

15.01.2022 We've just got our first batch of new whiskies in since re-opening! Copper Fox is producing some delicious Rye whiskies and Rye Single Malts all aged with some crazy woods we've never seen before. To celebrate, we have a new flight on the menu so you can try the range!

15.01.2022 Even though the ending was objectively horrendous, the whisky was never bad! We still have a few of the Game of Thrones whiskies kicking around the bar if you didn't get to try them when the show was still on (including the unreleased in Australia Clynelish)! Each house bottle hails from a different distillery around Scotland. From the smoky and fishy Lagavulin to the sweet and honeyed Dalwhinnie.

14.01.2022 A mainstay on the Helvetica Menu is our house Old Fashioned. Brown butter washed bourbon, demerera sugar, and angostura bitters served with a piece of house made coconut toffee for a rich twist on the classic Old Fashioned. (The classic is also available on request!)

14.01.2022 Hidden gems and limited editions aplenty to be found tucked away on our shelves. One of our favourites, the Highland Park Freya from the Valhalla Collection released in 2014. She comes with her own long ship! Sweet chamomile tea and fragrant pear lead the nose followed by green tobacco, and a hint of smoke. The palate is full of tropical fruits, candied ginger, cigar smoke and sweet caramels. A medium finish with honeycomb, cinnamon, and distant bonfire.

14.01.2022 If you're looking for something special on a rainy winters day, look no further. Macallan 25 year old Anniversary Edition is in a league of its own. This particular bottle is non-vintage which was one of the last of its kind to be released. Distilled some time in the 20th Century and aged for 25 years in sherry oak. And it's peated which is rare for Macallan this day and age. An absolutely stunning dram showing perfect balance and incredible complexity. The nose is rich with ...age, led by leather and green tobacco, followed by fresh cut green oak, soft and floral peat smoke, ripe raspberries and saltwater taffy. The palate is heavy and rich with old leather sofa, cloves, anise, green oak, and thick fireplace smoke. The finish is incredibly lasting, and very dry with a light acidity that makes you come back for a second sip. A dram that showcases the craftsmanship that earned Macallan the reputation it has today. See more

12.01.2022 A match made in Valhalla. Talisker and Maxwell Wines Spiced Mead mixed together and served hot with a twist of orange. Dubbed the Cloudy Skyes. On pour as a cocktail special, soon to be on the upcoming cocktail list revamp! Perfect for these cold and drizzly nights.

11.01.2022 An absolutely stunning new release from Balvenie has just hit our shelves. The Edge of Burnhead Wood 19yo is a limited edition released as part of the Balvenie Stories series. Smoked with heather flowers during malting, this whisky has an incredible flavour profile. Floral, sweet, a light acidity and bright red berries. The initial hit on the palate hints at green smoke with a touch of tobacco, instantly brightening then finishing crisp and clean.

11.01.2022 One of only a few bottles left of our independent bottlings! Hand in Hand was a collaboration between four big Aussie Whisky Nerds, Whisky and Alement, Oak Barrel, Liquor Library, and us! The label features an old Glasgow built steam train from the 1940's that was in operation in Melbourne. An Aussie classic.... The Juice inside the bottle is a whole different story though. Distilled at Ardmore distillery in the Scottish Highlands, the whisky has the classic notes you would expect: heather honey, caramel, malt biscuit, and oats. It is however aged in a barrel that previously held Laphroaig (known for their fishy, medicinal, smoky whisky). The ex-Laphroaig barrel has imparted layers of savoury and herbal notes. Cure meats, thyme, and coal fire. A long finish of damp smoke, with an oily mouth feel and leaving an impression of mossy flint.

11.01.2022 We loved the first batch of Copper Fox so much, we got the limited editions as well! An interesting distillery based in Virginia, there's a whole range of previously undiscovered flavours in these crazy whiskies! A recipe dating back to 1797, port finished rye and single malt, and last but certainly not least a Cognac finished rye!

10.01.2022 A stunning and complex whisky, perfect for cold winter nights. Acorn is a Japanese independent bottling company that began in the early 70's. This particular bottling was not a brokered barrel but filled with New Make Port Charlotte by the president of Acorn, Mr. Seishi Tsuta. Bruichladdich produced their first run of the medium-heavy peated Port Charlotte in 2001, making this 2002 vintage one of the oldest Port Charlotte ever released. Full of thick campfire smoke, smoked fish, brine, and toasted barley upfront. Layers on the palate with sweeter notes of honey, cream and smoky vanilla. A long and lingering finish of lanolin and coal smoke.

09.01.2022 Everybody loves a good delivery day! New in at Helvetica is the Glenallachie 15 year old. An absolute crackin' whisky that we are loving. This bottling is a vatting of whiskies aged in 100% Pedro Ximinez, 100% Oloroso, and first-fill American oak then finished for 20 months in PX and Oloroso casks.... Rich and dark, the sherry barrels have packed loads of flavour into this whisky. The nose is full of raisins, butterscotch, dark chocolate, and fruit cake spices. Fruity on the palate with light citrus notes, candied bananas, and ripe red berries. The finish is long and silky with a dry dark chocolate note on the end.

09.01.2022 We serve a mean classic cocktail here at Helvetica, but if you're not happy with our chosen spirit feel free to go crazy and try it with your favourite whisky instead! It'll open your eyes to a whole new world of whisky and cocktails. Sherried Manhattans? Peated Whisky Sours? Don't mind if I do!

07.01.2022 Don't miss out on this special little dram from Suntory! We've had trouble sourcing Hibiki for a couple years now due to global demand and a shortage of stock. Only one bottle! A sweet and floral nose, bergamot, black tea, green oak, toffee, and crisp apple. Soft and smooth on the palate with fresh coffee, oak and honey with soft spices and dried hay on the finish.

07.01.2022 Back in stock is our very first independent bottling (brought in from one of our private collections)! We teamed up with Casa De Vinos to bring you this special single cask whisky, distilled in Orkney in 2004 and aged for 13 years. A beautifully balanced whisky full of honey, fresh straw, orange marmalade, and light floral smoke on the back palate. Hints of tropical fruits, with a jammy mouthfeel, and a long earthy finish of green tobacco and charcoal smoke.

07.01.2022 What better way to spend a wet and gloomy day than with a warming dram of smoky whisky? The much sought after Ardbeg Dark Cove Committee release should do the trick! Aged in dark Sherry barrels for a richer and sweeter experience. Smoked seaweed upfront with kippers, wood smoke, and wine steeped plums to follow. Full of sweeter notes with vanilla, dark chocolate and licorice to balance out the thick smoke and long gunpowder finish.

07.01.2022 This stunning golden liquid is highly acclaimed by blenders, and in its single malt form we can see why! From the sister store to the famed Kingsman Tailors, Berry Bros & Rudd have released a single cask of 19yo Benrinnes. Rich and nutty, jammy and full of ripe fruit. Red apples, sweet berries, and a hint of citrus. A slight wisp of peat smoke on the finish.

06.01.2022 Only one more week until stage five and we're back to our old new normal! In the meantime we're slinging drinks til late tonight with minimal interference from these pesky restrictions. - Unfortunately stage five has been pushed back to a tentative August 1st, but we're still going strong so don't be a stranger!

04.01.2022 Next up on our new cocktail list is the Free Parking! Refreshing and tart with a stunning German Rosé Vermouth, house made strawberry compote syrup, lemon juice and sparkling wine. Perfect for sipping on these warm spring days.

04.01.2022 The latest batch of coconut toffee is ready to go! The perfect garnish for our signature Helvetica Old Fashioned. it perfectly matches the flavour profile of our butterscotch flavoured cocktail featuring brown butter washed bourbon with it's sweet coconut aroma and soft caramelized sugars that dissolve into the drink as you sip away.

03.01.2022 An old favourite of ours is back on the menu! The Cereal Killer is our take on an espresso martini, with Scotch, Disaronno, cold brew coffee, and house made horchata. Horchata is a traditional Mexican drink made with milk, spices, and rice. We've thrown our little whisky twist on it and used barley instead! ... Rich and creamy with layers of spice and flavour, absolutely delicious with coffee and whisky.

03.01.2022 A great winter dram from Scotland's oldest bottling company, 1996 Dailuaine Single Malt 21year old bottled by William Cadenhead. A heady nose of dry tobacco and green oak with light notes of honey and maple syrup. Sweeter on the palate with milk chocolate, malt biscuits, and red berries. A long and rounded finish of vanilla, tobacco, and stewed fruits.

02.01.2022 One of the frequent staff picks on our shelf. Ailsa Bay is a meticulously crafted whisky, micro matured in tiny ex-Bourbon barrels (some as small as 20 litres!) to control the exact levels of sweetness in the whisky. This is done to balance the sweetness with the smokiness for a perfectly balanced dram full of flavour. Thick salty smoke on the nose with hints of green oak and toffee. Smoky upfront on the palate followed by vanilla fudge, toasted cinnamon, green apple A medium... length finish with campfire smoke, pepper, and green apple. P.S. Happy Halloween!

02.01.2022 Our latest special flight, The Balvenie Stories Range. Available at a discounted price so more people can have a taste! The flight consists of 15ml pours of all four Balvenies, including the brand new release of the 19yo Edge of Burnhead Wood and the incredibly rare 26yo Day of Dark Barley. As far as we're aware it's the only bottle of the Day of Dark Barley in WA! Only a few made it over when this whisky was initially released and it's sold out everywhere! Be quick as there's not much left of our bottle at the time of posting.

01.01.2022 For a limited time only we're serving up an all ocker boilermaker under the aircon with a cold glass of Little Creatures Pale Ale straight out of Freo and a delicious Tassie single malt from Nant. The perfect pairing for these muggy nights.
