17.01.2022 C R E E P Y C O C K T A I L H O U R Why should kids have all the fun? Build 35ml Hepburn Spooky Springs Gin, 120ml cranberry juice, a squeeze of lemon juice, 2 tsp rosemary sugar syrup and a couple of splashes of lychee syrup over ice in a chilled glass. Stir gruesomely. Garnish with a bloody eyeball (lychee with a blueberry).

17.01.2022 The newly opened @kadotarestaurantofficial is a must visit the next time you’re in Daylesford. The seven-course set menu is chock full of seasonal local ingredients. It’s hard to pick a favourite, but the sashimi set and the Shio koji braised free range pork dumplings were personal highlights. The interior details are as thoughtful as the menu and the service - from the charred black timber on the wall to the brass chopstick holders.... And lets not forget the drinks list. There’s a wide selection of Japanese beer, sake and whisky. Or if you’re looking for something local try a Hepburn Springs Gin A fabulous experience from start to finish.



15.01.2022 C O C K T A I L H O U R If you’re looking for a fresh kick to take you into the weekend, you can’t go past a Basil Smash (aka Gin Pesto). We agree with cocktail creator, Jörg Meyer, when he says better too much, than not enough basil in this drink. Muddle 12 big basil leaves in the bottom of a cocktail shaker, add 50ml Hepburn Springs Gin, 25ml fresh lemon juice and 15ml sugar syrup then fill the shaker with ice. Shake vigorously. Double strain into a rocks glass with ice. Garnish with a few basil leaves. Best enjoyed in the sun.

11.01.2022 C O C K T A I L H O U R What better way to celebrate the arrival of autumn weather in Hepburn Springs than a spiced pear gin cocktail Combine 45ml Hepburn Springs Gin, 20ml fresh lemon juice, 20ml spiced pear sugar syrup* and 50ml pear juice in the base of a cocktail shaker. Add ice. Shake. Strain into a chilled glass filled with ice. Garnish with a slice of pear and some thyme. *to make your own spiced pear sugar syrup combine 1/2 cup sugar, 3/4 cup water, a chopped pear, two star anise and a cardamon pod in a small saucepan. Brings to boil. Simmer for 5 mins and then strain. Keeps in the fridge for up to a week.

05.01.2022 C O C K T A I L H O U R This little Easter delight is a spiced pear sour. The spice, from star anise and cardamom, gives a hot cross bun vibe Combine 60ml Hepburn Springs Gin, 25ml spiced pear sugar syrup*, 45ml lemon juice and one egg white in a bottom of a cocktail shaker. Dry shake. Add ice and shake again. Garnish with a couple of star anise. *to whip up a batch of spiced pear syrup simply simmer 3/4 cup water, 1/2 cup sugar, one chopped pear, 2 star anise and a cardamom pod in a small saucepan for 5 minutes. Cool. Strain.

03.01.2022 C O C K T A I L H O U R Tonight’s cocktail is to welcome back our Melbourne friends to the Hepburn Shire. It’s classic, understated and almost certainly a crowd pleaser. The Gin Fizz Combine 60ml of Hepburn Springs Gin, 20ml of fresh lemon juice, 15ml sugar syrup and an egg white in a cocktail shaker. Dry shake. Add ice and shake again. Strain into a chilled glass. Top with soda water. We garnished with a dried blood orange to mix things up. Cheers, Melbourne

02.01.2022 C O C K T A I L H O U R The Clover Club. Enjoy this classic that dates back to a gentlemen’s club in pre-prohibition times (oak paneled lounge not required). Combine 45ml Hepburn Springs Gin, 15ml dry Vermouth, 25ml fresh lemon juice and 1 generous tsp of quality raspberry jam in a cocktail shaker. Add half an egg white. Dry shake. Add ice. Shake again. Strain into a chilled coupe glass. Garnish with fresh raspberries. Certainly not just for the gentlemen.

02.01.2022 C O C K T A I L H O U R When it’s hot and muggy outside, you can’t do much better than a Gin-Gin Mule. This twist on the classic mule is the brainchild of Audrey Saunders of New York’s Pegu Club. Muddle 8 mint leaves, 15ml sugar syrup and 25ml lime juice in the bottom of a cocktail shaker. Add 45ml of Hepburn Springs Gin and fill with ice. Shake. Double strain into an ice filled glass. Top with @mineralspringsco organic ginger beer. Finish with a sprig of mint and a slice of lime. Be ready to make another round.
