22.01.2022 CHICKEN BONE BROTH Ingredients: 1 pound/500gms bone-in chicken (such as drumsticks, thighs, or wings) 2 leeks (roughly chopped)... 2 carrots (roughly chopped) 1 onion (peeled & roughly chopped) 2 cloves garlic (halved) 1/2 inch ginger (piece, peeled and chopped) 1 inch turmeric root (piece fresh, peeled and chopped) Alternatively use 1 teaspoon of turmeric powder. 6 black peppercorns 2 - 3 black cloves 1 bay leaf 2 litres filtered water 1 tablespoon apple cider vinegar (to help extract nutrients from the bones) * add salt to taste ** fresh cilantro/coriander (for garnish, optional) _______________________________________ Directions: - Place all the ingredients (except the fresh cilantro) in a large pot and bring to a boil. - Skim off any foam that may arise. - Reduce the heat to a low simmer and cook the broth with the lid on for 3 hours. - Strain the broth and serve hot with a garnish of freshly chopped cilantro. ** Store it in the fridge for up to 5 days or freeze for longer use.

To make the lavender tea, bring the water to a boil, then remove from the heat. Add the lavender and leave to infuse, covered, for about 15 minutes, in a saucepan or a measuring cup. Allow to cool. Step 2. Over a pitcher, pass the infusion through a sieve. Add lemon juice and sugar, mix, then add cold water or soda water. Step 3. Refrigerate 1 to 2 hours. Serve with lemon wedges and lavender flowers. You can also make lavender ice cubes by placing lavender flowers to make your ice cubes to serve with the lemonaid.
