19.01.2022 HIB Pantry brings you the best sticky date & oat cookies ever. Ingredients Cup finely chopped pitted dried dates 150g unsalted butter, chopped ... 2 tbsp bicarbonate of soda 1 cups (185g) plain flour 1 cups (110g) traditional rolled oats 2/3 cup (150g) firmly packed brown sugar Caramel Icing 40g unsalted butter, chopped cup (55g) firmly packed brown sugar 1 tbsp milk 2/3 cup (110g) icing sugar mixture 1. Preheat oven 150C fan forced. Line two baking trays with baking paper. 2. Combine dates, butter, syrup and 1 tbsp of water in a pan on medium heat. Cook, stirring often, for 3 mins, until mixture comes to the boil. Stir in bicarbonate of soda. 3. Combine flour, oats and sugar in a large bowl. Stir in date mixture until combined. Roll heaped tablespoons of mixture into balls. Place on prepared trays, about 5cm apart. Flatten to 1cm thickness. Bake for 10 mins, until golden. Cool trays for 5 mins. Transfer to a wire rack and cool completely. 4. To make caramel icing, combine butter, brown sugar and milk in a small saucepan on medium heal. Cook, stirring often for 2 mins until sugar dissolves. Remove from heat and whisk in sifted icing sugar. Pour into a bowl. Cover surface with plastic wrap and refrigerate for 15 mins until thickened slightly. Drizzle a teaspoon of icing on each biscuit. Allow to set before serving. Optional - combine the brown sugar with the dates and butter etc. Add 1 cup of shredded coconut with dry ingredients.

15.01.2022 Need some inspo for weekend cooking, here's another one from the HIB Pantry! Nick’s Chicken Fettucine Carbonara 500gm of chicken thigh fillets... 2 rashers of bacon. Salt, Pepper & Garlic Powder. 1 Leek 5 Button Mushrooms Good spoonful of Butter 2 Garlic Cloves (crushed) or use a decent amount of Minced Garlic Glug of White Wine (or Chicken Stock if no wine available) Small amount of Cooking Cream 2 Egg Yolks Fettucine Pasta Parmesan Cheese to garnish. Method 1. Dice chicken thigh fillets, season with salt, pepper and garlic powder. 2. Dice bacon. 3. Slice white and light green sections of the leek, slice mushrooms in half. 4. Cook chicken in a bit of vegetable oil on medium heat until brown. 5. Whist chicken is cooking, bring a saucepan of water to the boil (add olive oil and salt to the water). 6. Remove chicken when cooked and quickly fry bacon, when bacon is cooked, you can set aside with the chicken. 7. Give the saucepan a quick wash under water and clean/dry with paper towel. 8. Put the saucepan back on a low/medium heat, add a bit of oil, the butter and the garlic when it heats up, put in the leek and mushrooms mix well and season with salt & pepper. Add a bit of wine (or stock) continue to simmer for a couple of minutes. 9. Add pasta to the boiling water, this should take 11-13 minutes to cook al dente. 10. After a few minutes, add the chicken and bacon back into the saucepan, stir and turn the pan down to low. Then add a small amount of cooking cream into the saucepan and stir to mix. 11. Once pasta is cooked, drain and add to the saucepan. Turn the saucepan off and add two egg yolks (don’t add the whites) mix through thoroughly, do not put the saucepan back on the heat. 12. Serve immediately, garnish with parmesan cheese and pour a large glass of wine.

11.01.2022 HIB Pantry...Nick's Prized Open Steak Sandwich Recipe The key here is fresh ingredients; this is what you need. Minute steak (easily found at your supermarket or ... preferably the butcher) Butter Allspice, Curry Powder, Salt & Pepper Iceberg Lettuce Sliced Tomato Tasty Cheese Sliced. Sliced Beetroot Caramelized Onion Relish (I use Baxter’s). One slice of good quality white bread - toasted. Method Rub a decent amount of salt & pepper then a dash of allspice and curry powder into both sides of the steak. Heat oil in a pan or grill pan, cook for 45-60 seconds each side (or to your liking). Then remove from the heat. Toast bread and once done, smear with a good amount of butter and then add the cheese, tomato (season with salt & pepper), beetroot, the steak, caramelized onions and then the lettuce. Devour immediately with a cold beer.

06.01.2022 HIB Pantry...You asked for it so here it is. Thanks Amy for another yummy recipe. Chicken Stroganoff 4 x Chicken breast fillets, sliced/diced for stir fry ... 1 garlic clove, minced 1 onion, diced 2 Tbsp Tomato Paste 1 cup chicken stock 2 teaspoons Paprika 200g sliced mushrooms 1 cup light sour cream (can start with half and add to taste) Cup Fresh Parsley Salt & Pepper Cook chicken, Add in mushrooms, garlic and onion and cook until softened Add paprika & tomato paste Add in chicken stock & sour cream Let this simmer slowly, uncovered until thickened Add in fresh parsley & salt & pepper to taste Serve with Rice or Pasta Also great in the slow cooker, using larger pieces of chicken and add sour cream toward the end.

02.01.2022 We have dinner sorted, another great recipe from our HIB pantry. Amy's Slow Cooked Chicken & Corn Chowder 3 4 Chicken Breasts, cut into 1 inch pieces ... 1 brown onion, diced 3 Carrots, diced 1 large Red Capsicum, diced 850g Fresh or frozen Corn kernels (equivalent of 4 cobs and a large can of kernels) 420g can creamed corn 4 large potatoes, cut into 8 3 cups Chicken Stock 3 teaspoons Garlic Powder 250ml thickened cream cup Cornflour (mixed with a little water) cup grated mozzarella cheese cup grated tasty or cheddar cheese 1 cup bacon, cut into small pieces Chives or spring onions, to serve Salt & Pepper Sear chicken, add to slow cooker Add diced onion, carrots, capsicum, corn, potatoes, chicken stock, garlic powder, salt & pepper Cook for 4 hours on high or 8 hours on low In the last half hour, add cornflour, cream and milk and cook without lid to thicken Potatoes may also be mashed in the soup to thicken Add in cheese and cooked bacon Stir through chopped chive or spring onions to serve and season to taste Makes approximately 8-10 serves
