17.01.2022 With a cool snap coming this weekend, you may need some warming comfort and........ The best Cauliflower au gratin ever! You’ll need:... - 80g (1 cup) coarsely grated High Valley Caerphilly or High Valley Smoked Cheddar or if you’re really seeking decadence, High Valley Triple Cream Brie or Rouge (with or without the rind, it’s your choice, both options are delicious) - Melted butter, to grease - 800g cauliflower, cut into small florets - 50g butter - 40g (1/4 cup) plain flour - 600ml milk - White pepper - 55g (3/4 cup) fresh or store bought breadcrumbs - 25g butter, extra, melted Lightly brush a 1.25L (6-cup capacity) ovenproof dish with melted butter. Cook the cauliflower in a saucepan of boiling water for 5 minutes or until tender (or steam if you prefer). Drain. Transfer to the prepared dish. Now for the cheesy bit: Heat butter in a medium saucepan over medium heat until foaming. Add flour and cook, stirring, for 2 minutes or until the mixture bubbles. Remove from heat. Gradually add the milk, stirring constantly, until smooth. Place over medium-high heat and cook, stirring, for 5 minutes or until sauce boils and thickens. Remove from heat. Stir in three-quarters of the cheese. Season with salt and white pepper. Pour over the cauliflower. Preheat grill on high. Sprinkle the breadcrumbs over the cauliflower mixture. Drizzle over the extra butter and sprinkle with remaining cheddar. Place the dish under the grill, about 10cm from the heat source, and cook for 5 minutes or until golden. Yum!!!

13.01.2022 Need some dinner inspiration? How about our HIgh Valley Cheese Co Brie and bacon pasta. Quick, simple and yum! 250 300 Grams of pasta of choice (boil in plenty of salted water keep one cup of water when done) 4 Rashers of bacon, diced and fried until crisp Onion diced... 2 Cloves of garlic crushed 1 Round of High Valley Brie cut into cubes 10-15 Basil leaves sliced Lemon Juice and Salt and Pepper to taste. Fry your bacon in a little olive oil if needed add onion after a few minutes and cook until onion soft and bacon crisp. Add garlic. Turn off heat. Cook pasta according to packet instructions (reserve 1 cup of liquid before draining). Add High Valley Brie to bacon and onion then the reserved water from cooked pasta. Stir until Brie melts. Add pasta and combine well. Lastly toss through or top with basil leaves. Serve and season with salt and pepper and squeezed lemon as you require. You can substitute Brie with our Rouge, either our Stefan or Colly Blue and even Smoked or plain Caerphilly, or our Fetta - so basically any of our cheese! )

Ingredients & method:... 50g (approx.) of High Valley Stefan or Colly Blue Cheese (or our Triple Cream Brie if you're not a blue lover) 2 sheets frozen puff pastry (just thawed) 1 egg lightly whisked 1 tablespoon of almond meal 2 small firm pears, sliced thinly lengthways 1 tablespoon of local Mudgee honey cup local Mudgee hazelnuts, walnuts or pecans toasted Extra honey to drizzle before serving Baby rocket or spinach leaves to serve Preheat oven to 200C. Line a baking tray with baking paper. Place 1 pastry sheet on lined tray. Top with remaining pastry sheet. Lightly brush with egg and sprinkle with almond meal. Arrange the pear, overlapping slightly, over the pastry, leaving a 1cm border. Drizzle with honey. Bake for 20-25 mins or until the pear is just tender and pastry is golden brown and puffed. Sprinkle the tart with the blue cheese and walnut. Drizzle with the extra honey and sprinkle with rocket to serve.

11.01.2022 With the talk of get togethers for Christmas already on the horizon, this could be your new favourite party food! (Or make them bigger and you have a delicious dinner or lunch to serve with a crisp side salad). High Valley Brie, Asparagus and Ham Pastries Approx 225grams High Valley Brie cheese, cut into about 16 pieces 1/3 cup apricot preserves or favourite chutney, relish or jam 4 slices good quality ham, quartered or cut to suitable size... 16 small or 8 large (halved) Asparagus Spears 2 sheets frozen puff pastry, thawed Preheat oven to 200. Cut into pastry into 8 squares on each sheet. Place 1 teaspoon preserve/relish or jam in centre of each square; top with ham, then asparagus and finally High Valley Brie. Fold up slightly to keep it all in place. Overlap 2 opposite corners of pastry over filling, pinch tightly to seal. (See picture for end result). Place on a baking sheet lined tray. Bake 15-20 minutes or until golden brown. Cool on tray 5 minutes before serving. (For vegetarians, simply leave out the ham). (Can be frozen if needed too). See more
