23.01.2022 Unfortunately the building stage of the shop is behind schedule, but as these photos show, we are closer to getting the keys! A big thanks to Chad Capuano and his team for the amazing epoxy floor he has put in. The developer has even commented it's the best he's seen. Chad is a Nairne local too, we are always keen to support locals. Stay tuned for further updates regarding our opening date, it looks like it will be after Australia Day at this point in time.

17.01.2022 We have received our meat rail system for aging of our meat. It is custom built and we will be able to hang our products the old fashioned way, like in Luke's parents butcher shop back in the day. We think it's pretty good, even Chloe likes it!

16.01.2022 Luke has been working on our marinade flavours and last night we had a meal of chicken wings! Pictured are the Honey Soy marinade and the American BBQ marinade, both made from scratch, and gluten free. Both were delicious, and no complaints from the kids!

14.01.2022 We have had a great week of progress. We have a front door, the meat cabinets are in and operational, and the coolrooms are finished! At this stage we are looking at opening the first week of February. Our kids are excited too, having fun playing shop now we have the cabinets!

08.01.2022 Luke has continued to perfect his marinades, and the most recent is for his slow cooked pulled beef brisket. This one has a bit of a kick to it, definitely not for the kids! Pictured on the left is the brisket straight out the oven, and on the right ready to serve with a horseradish cream, the perfect accompaniment!
