21.01.2022 ‘He’ requested rissoles and mash ! But there had to be a compromise .... My polenta rather than mash. Ok he said , with a sad face. ... I have known this man for 10yrs and with all the fabulous meals I have cooked he announces that this is the best he has ever eaten Seriously men !! Anyway heres the recipe I mean it was delish but hell I have done way better Rissoles 1/2 kg of lamb mince 1 small ref onion diced finely 1tsp curry powder 2dsp of tomato paste 2dsp of worcestershire sauce 2dsp of soy sauce 1 egg 1 cup of panko crumbs Blend together in bowl and leave to marinade for 3 hrs before cooking. Heat olive oil in frying pan and roll small patties and slowly pan fry both sides Mean while have 5 ltrs chicken stock boiling, add 250g of mascarpone and 500 grms of polenta and stir until thick and add 2 cups parmesan and 250 grms of butter Leave to make gravy Take out rissoles onto plate and leave juices in the pan Add 2tlbsp gravox 1/2 tsp curry powder 1 dsp of worcestershire sauce 1/2 cup of port And stir, if too thick add 1/3 cup hot water at a time So now to plate up !!! Spoon on polenta Top with rissoles Coat with yummo gravy ‘He’ was very happy xx Enjoy Love Jane xx

09.01.2022 Well we are having a late dinner tonight due to me being so busy with classes But the upside is I got super fresh flat head fillets when I collected my scallops on Tues morning from George Town Seafoods ( both only 12 hrs out of the ocean) Tonight the flathead done in a Boags Premium beer batter with smashed wedges, done super crunchy with a lime and tarragon aoli and Greek salad.
