14.01.2022 Baked Potimarron stuffed with saffron pilaf. Potimarron is a cute little pumpkin with a large seed cavity making it ideal for stuffing. No peeling required as the skin is delicious and softens once cooked. A tasty saffron rice pilaf makes the perfect stuffing - always start by infusing your saffron in a little warm water. While your saffron is infusing, sauté some onion and garlic in olive oil, add some spices, I used cumin, coriander seed, cinnamon and star anise and cook ...until fragrant. Add some long grain rice and the saffron infusion and let it soak up the fragrant spice mixture. Add some stock and toss in some pepitas, currants and chopped dates and cook with the lid on until the stock is absorbed and the rice is just cooked through. If you like you can fry up a little mince and add it to the rice mixture (or diced up mushrooms for a vegetarian option). Cut the top off the potimarron and scoop out all the seeds, then stuff with the rice mixture, drizzle with a little olive oil and bake at 200 for about 40 minutes to 1 hour, making sure the potimarron is cooked through. Once cooked, cut into quarters and dress with a some creamy feta or goats cheese and drizzle with pomegranate molasses. Enjoy!

12.01.2022 Better than expected - a cold snap and some welcome rain has put us back on track for another good harvest this year. The warm weather stifled flower production and gave us a little more leaf growth than what would be ideal, making it even more challenging to pick, but the flowers are beautiful with nice, robust stigmas and that equates to quality saffron. We will have good stocks of saffron this year and are currently taking wholesale orders from retailers wanting to stock... our pure, Australian grown saffron. 11.01.2022 Same time next year! This good foliage growth indicates that saffron picking season is drawing to a close. Time now for the Crocus corms to use their time of leafy growth to re-energize in readiness for another bumper crop next Autumn. Most importantly, we now have some time to give Gus, the most patient and loyal dog ever, some well deserved attention. It’s always nice to get back to some normality, but we will miss our little mauve babies greeting us every morning. ...
