19.01.2022 Next stop, sushi! Hokkaido Sushi Elizabeth St has made a name over on the eastern shore but get excited as they have just opened up a Hobart location in the h...eart of Elizabeth Mall. We sat down with co-owner Eric to discuss his new venture. The sushi train circulates delicious sushi throughout the day with everything from sashimi through to katsu. If there isn’t something on the menu that interests you, order off the electronic menu and the train will ensure it is delivered to your table. ‘The fun thing about the train is that you can try lots of different things. Just pick it up and give it a go’, says Eric. You will find the usual suspects like sushi rolls, aburi, agedashi tofu, edamame and a variety of tempura options. A customer favourite, and it seemed like Eric’s favourite too, is the Hobart roll. Think raw or grilled salmon, cream cheese and cucumber. Eric originally immigrated to Australia and settled in Adelaide. He noticed that in Adelaide there is an abundance of sushi trains, particularly in shopping centres, but Hobart was lacking, so he wanted to change that. Although Eric loves to cook, his background is in accounting, so he took a leap into the world of hospitality. ‘We thought about opening a sushi franchise, but decided to start a business from scratch because we could personalise it more’, says Eric. For anyone who hasn’t ventured to Hokkaido in Japan, it is an amazing place only moments from some great ski fields! Eric named the sushi train after Hokkaido as a legacy to the location of where one of the business partners used to live. Hokkaido Sushi also do takeaway options for a lunch on the run. We had inari the other day, it was not only wellpriced, but also tasty (we didn’t even wait to return to the office to eat it). On offer is also a range of gluten-free and vegetarian options.
