18.01.2022 My exhaustion has been elevated this week as my oldest son Alex is transitioning from nappies overnight, admittedly I should have done this a while ago but the timing never felt right after a few sleepless nights I give up. This week my cooking inspiration has been at a low... however after checking out a few favourite recipe websites I found a few solutions that called to me. So on this weeks menu is... Four bean shepherds pie with seasonal salad of local Gooree Park pesticide free oranges, baby spinach and cucumber and a handful of hemp seeds; Gluten free lasagna and gem lettace salad (and a bonus one for the freezer dor another week) Gluten free sausages, sweet potato fries and ghee chargrilled broccoli; macro super bowl, brown rice, frozen broadbeans, grated beetroot, spiralized carrott, tahini maple dressing and sesame seeds (plus anything else the kids fancy); Loaded roast spuds with shredded purple cabbage, fresh chargrilled corn, chargrilled fresh pineapple and tomatoes marinated ocean trout fillets with roasted vege Alex’s choice of 4th birthday dinner yet to be decided followed by gluten free cake (not made by me as I suck at baking) Thanks to Neil's Fruit And Vegetables who deliver to Mudgee and pack the order for my speedy collection and always have wonderful tips on how to use the parts of the vegetables you never get if you buy at a major shopping centre! Also its reduced plastic as they put it in a box and don’t plastic shrink wrap anything!!!!

Absolutely worth supporting and understanding what we are nourishing our children with and also just how the food manufacturing company may market an item as being good for us, yet it can be creating reactions in our children that perhaps they cannot articulate.... So worth it for things you know you will use frequently. This article got my interest as it explains oats and this time of year many people that are gluten free do miss porridge and honey! 16.01.2022 Tonight I made some grain free chicken nuggets for a lunchbox go too with sneaky vegies, they are delicous and freeze well and are another way to get more nutrients into yourself and family. Admittedly I have a thermomix which does make easy work of them, however any food processor will do fine. Can be baked or shallow fried in a high heat stable fat, I use grassfed ghee. ... The Toxicity of Wheat This is an extract from https://autism-adhd.org.au/ Epidemological studies indicate that the incre...ased prevalence of modern diseases, ASD and ADHD is associated with a western style diet (such as nutrient-poor processed foods, food additives, colourings and preservatives) and environment factors such as lifestyle and pollution. Our Modern wheat has a short stem, the result of the introduction of dwarfing genes in the 1960s by Norman Borlaug. He won the Nobel Peace Prize in 1970 for his work in back crossing hybrid species of wheat for robustness, increase yield and pest resistance. This genetically engineered new wheat species contains extremely high levels of Wheat Germ Agglutinin (WGA), a Lectin that protects wheat from insects, yeast and bacteria by disrupting structures containing N-acetyl-D-glucosamine and Sialic acid in their bodies and killing these pests. At such high concentrations, WGA has the potential to bind to and disrupt the integrity and function of the following tissues and promoting inflammation: -Joint cartilage -Mucous membranes, e.g. the lining of the inner nose and lungs -Mucous lining of the digestive tract and intestines. -Arteries around the heart. -Beta pancreatic cells that are involved in making Insulin. -Hippocampal brain cells -The cornea of the eye. There are also health issues with other aspects of gluten. If there is an overgrowth of Streptococcus bacteria in the bowel (caused by too much grains, animal proteins and refined carbohydrates and not enough fruit and vegetables). The Strep produces an enzyme Streptococcal Kinase which binds to the DPP-IV digestive enzymes needed to breakdown gluten and casein. This resulting lack of DPP-IV results in gluteomorphine and casomorphine being produced due to inadequate denaturing of gluten and caseine. These exorphins can have a myriad of opiate-like effects on the brain resulting in a dulling of cognitive skills. Many people have the genes for Coeliac disease without overtly having Coeliac disease. However, these carriers are much more likely to have Irritable Bowel Syndrome for years before eventually developing Coeliac disease which results in damage to the intestinal villi. A Coeliac Serology is only positive when the IBS condition has deteriorated to the point of damaged villi and elevated titres.
