15.01.2022 We found this great recipe recently on the @australianeggs website for an old favourite that just happens to be an excellent partner for our honey. Pancakes are a big hit for weekend breakfasts across the nation, but we prefer their thinner more elegant relative - the crepe. Recipe Credit: australianeggs.org.au INGREDIENTS... 1 cup all-purpose flour 2 eggs cup milk cup water tsp salt 2 tbsp butter, melted Butter or margarine, for frying METHOD In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth. Heat a non-stick frying pan over medium high heat and melt butter. Add the batter into the pan, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot. Our addition to this recipe - top with thinly sliced banana, a squeeze of lemon juice and a drizzle of one of our Gourmet honeys - Lemon Myrtle, Cinnamon and Vanilla Bean.
