20.01.2022 ok so here it is.. With over 13 years of personal experience in the industry, sometimes I get the questions, which knife should I get for home? What knives have you used? And what does the difference between soft and hard steel ultimately make in the kitchen? Hopefully this might answer some of those questions.... The difference between soft and hard steels when it comes to the functionality of any knife, is the time in which the bevel, or "sharp part" takes to sharpen, and the time that it takes to become blunt. A softer steel, like that found in a lot of Japanese crafted knifes, tend to sharpen much faster, and can be honed by a steel to become a much sharper blade, the problem with this is that you'll find out all that hard work and effort was wasted when your knife is completely dull again after 10kg of tomatoes and one pineapple fritter was cut. And I used those fruits specifically because generally the higher the acidity your steel is being exposed to the faster it blunts as well.. A hard steel will literally take you an hour over a course grain stone to finally get sharp, but you will find that blade lasting upwards of 2 weeks! And of course all these time constrains are based upon my experience in a commercial kitchen, so we'll assume that for all of you at home that the time would be somewhat relative :) I would say that the best all round knife that I have ever purchased, and I have seen countless times as the stock kitchen share knife of any kitchen I have personally entered is...Victorinox! I think when it comes to knives they've been doing it long enough to know what there doing, German stainless steel, non slip handle, and really nicely balanced. I've always recommended this knife whenever apprentices ask me what knife they should get as you cant really go wrong! We can go into the pros and cons of all the famous Global's and Shun's but at the end of the day there isn't really a negative with what Victorinox has to offer, and it is I might say the first knife tafe's will recommend you aswell ;) I hope this has taken some guess work out of the equation if any of you are still contemplating a great new addition for your home kitchens and just remember to always wash you knives by hand! heat, dishwasher chemicals and knives don't mix ;)
