21.01.2022 Easter is a great time to go camping and here are some suggestions for the menu........Home made Chicken Liver Pate (for afternoon drinks): Choc-Orange Cake (with coffee for morning tea): Chicken, Date & Honey Tagine or Beef Spare Ribs with Oregano & Mushroom Sauce.....the list is endless and I CAN HELP YOU PREPARE IT!! 20.01.2022 Saturday evening dinner on a hot Brisbane night was iced cucumber soup, pasta with creamy smoked salmon & leek sauce followed by baked strawberries with wine jelly and frozen Greek yoghurt...

20.01.2022 First job was to cater for Xmas drinks last Friday night. Menu included home-made pate, mini quiche, rice/pea/fetta cakes, chicken tikka masala balls, beef tartlets, camembert on pumpernickel & other nibbles. Client happy & guests happy = good outcome!! But I was trumped by Cliff Anderson who brought home-made brioche with scrambled egg & caviar..Outstanding!!

19.01.2022 A couple of quick things - Home-made mango & passionfruit ice-cream; Left-over Roast Chicken in Yoghurt Mayo with Beetroot, Orange & Fetta Salad: Roast Vegie Phyllo Tart with a vaguely Ceasar Salad (housemate doesn't eat bacon - therefore outstandingly healthy!!)

18.01.2022 First bona fide catering job done & dusted (the last few were 'Love Jobs'). Small group going to Winton in late March to the Dinosaur Lab for 5 days & wanted everything preprepared & frozen. 4 dinners, 5 cakes (morning tea is appreciated by the lab staff), 3 desserts, yummy things for breakfast & lunch, and travel packs for snacks on the way. 9 hours in the kitchen - the boss said it was good time management (HANG ON!! I am the boss!!! Good on me!!) Ready for a wine now!!!

18.01.2022 My gorgeous sister-in-law gave me a cookbook that was given to my grandmother - 1944 edition......it is fascinating.....High Altitude Cooking: War-Time Cooking: Table Settings. It is hard to go past the Baked Opossum (described as a very fat animal with peculiarly flavoured meat). To dress it, one immerses it in hot water and removes the fur with a blunt knife....the head & tail can be cut off if desired........Oh My Lord!!!

05.01.2022 Quickly bashed out some scones & jam drops for afternoon tea for one of the bros (Tom) & his wife (Mary)...the pale jam drops have got lime marmalade in them - tried it before and it was good!
