12.01.2022 With the World Cup underway what a great time to try out some interesting BBQ recipes from other countries. Have you explored any national dishes you'd like to share? An Argentinian steak, some Spanish tapas or just some good Greek charcoal calamari. Let us know some of your favourite international dishes, we might give them a go too.

11.01.2022 Don't stress over finding the perfect ham recipe for Christmas - we've already done the searching for you! This BBQ'd ham will change the way you enjoy this Christmas classic forever and is sure to be a hit! Ingredients: 6-7kg leg ham, uncooked and brined Olive oil... Salt Aluminium foil High-heat kettle BBQ Drip tray Hot Shots BBQ Briquettes Moist Australian wood chips (we recommend ironbark or oak) Method: 1 Prepare the kettle bbq with Hot Shots briquettes and by placing a drip tray in the bottom to collect the fluid from the ham. 2 Rub olive oil and salt all over the ham and place on the grill. If any part of the ham is directly over the briquettes, protect it by covering with aluminium foil. 3 Cook on high heat fire for 1 hour and 45 minutes with the lid on and all vents open. 4 Uncover the bbq. Remove the crackling from the ham and ensure to leave a thin layer of fat on the ham. 5 Place moist woodchips directly onto the briquettes in order to smoke the ham. 6 Replace the lid and cook for a further 1 hour and 15 minutes, adding additional moist woodchips to the bbq every 15-20 minutes to ensure adequate smoking. 7 Remove the cooked ham and enjoy! If eating warm, carve immediately. If eating cold, allow ham to cool in a moist linen sack.

05.01.2022 It's official. Last Saturday was the Winter Solstice. The longest night of the year. The nights are now getting shorter with more daylight hours. We'll start to move our attention to BBQs with a lot more fanfare soon. In the meantime keep those fires burning. Thanks for your interest.
