22.01.2022 Sunday morning means Lemon and Ricotta Pancakes Recipe by: @whatspruecooking Makes ~15 pancakes Made in the: BaccaratiD3 CS Hard Anodised 20cm Frypan with Bakelite Handle now on sale for $31.99 ($89.99 RRP) with the code BACC20 https://bit.ly/2SGGbQc... Ingredients: 2 eggs 125g ricotta cheese Zest of 1 lemon, finely grated 1 tsp vanilla extract 1 tbs brown sugar or coconut sugar 1 cup self-raising flour 1 tsp baking powder 1 cup milk 1/3 cup lemon juice Method: 1. Place all ingredients into a blender and blitz for 10-15 seconds to combine. Scrape down the sides of the blender to ensure all components are included and blend for a further 10 seconds 2. Heat a medium-sized non-stick frypan over medium heat. Pour the batter into the frypan to make a pancake ~ 12-15cm in diameter and cook until it starts to bubble. Flip and cook for ~45 seconds on the other side. Repeat with remaining mixture. 3. Serve with thick natural yoghurt, fresh fruit and a drizzle of maple syrup. A good dollop of lemon curd would also be delicious #houseathome

21.01.2022 Warm weather calls for a Potato, Smoked Bacon and Gremolata Salad Recipe by: @_nessgordon - head to her page for more delicious recipes! Ingredients... For the salad: 250 grams green beans, trimmed 4 potatoes, peeled, quartered 4 rashers smoked streaky bacon cup kalamata olives pitted For the gremolata: 1 large handful of parsley leaves Zest of 1 lemon 1 garlic clove, peeled and crushed 3-4 tbsp extra virgin olive oil Pinch of salt and pepper Method Boil the potatoes for 8 - 10 minutes until cooked, drain and return to the pot. Boil the green beans for 2 - 3 minutes so that they are cooked but retain their crunch, drain and set aside. Cut the bacon into 1cm pieces and fry until crispy, no need for oil here as there is plenty of fat in the bacon. Prepare the gremolata, in a small mixing bowl combine finely chopped parsley, lemon zest, crushed garlic, olive oil and a pinch of salt and pepper. Stir the gremolata through the warm potatoes. Serve the salad, in a large bowl with the gremolata potatoes, beans, olives and bacon. Season with salt and pepper, add a splash of red wine vinegar if you fancy some extra zing! Enjoy

This Japanese Chicken Curry is quick, simple and easily serves four people Recipe by: @_nessgordon Made in the: Baccarat iD3 Non-Stick 28cm Serving Pan https://bit.ly/3iKlFsu... Ingredients: 2 tbsp cooking oil eg. vegetable 500g chicken thighs, cut into 5cm pieces 2 brown onions (350g), chopped 2 carrots (250g), peeled and cut into rounds 1 potato or sweet potato (200g), peeled and diced 550ml water 92g Japanese curry powder mix* Serve with steamed rice Method: Heat oil in a non-stick pan over medium heat. Add onions and chicken thighs and saute for 4-5 minutes Add vegetables and water and bring to the boil. Turn heat down to low-medium and simmer for 15 minutes Break up curry mix into pieces and add to the pan, stir continuously until melted. Simmer for 5-10 minutes further until vegetables are tender and curry has thickened slightly Serve immediately with steamed rice *Japanese curry mix is available at most supermarkets and Asian grocers, we have used ‘S&B Golden Curry, Japanese curry mix for this recipe’. #houseathome

Ingredients - 1 onion, sliced 1 tbs minced garlic 1 tbs minced ginger 2-4 tbs tandoori paste 2 tbs tomato paste 1 can coconut cream 1 can chickpeas, drained and rinsed 2 medium carrots, sliced 1 zucchini, sliced 200g baby spinach Method - Begin by heating a little oil or water in a pan, add the onion and cook for 5 minutes or until the onion softens, then add the ginger and garlic, cooking for another minute Add the tandoori and tomato paste, cooking for 2 minutes until the mixture is fragrant Add all remaining ingredients except the baby spinach. Once the curry has come to the boil, reduce to a simmer and cook for 15-20 minutes or until the vegetables are cooked through Once vegetables are cooked, add the baby spinach and stir through until wilted. INGREDIENTS: 1/2 cup coconut flour 1 scoop of salted caramel protein or alternatively salted caramel flavouring 2/3 cup pure coconut cream 1/3 cup runny peanut butter + 1 tbsp METHOD: In a mixing bowl, mix together all ingredients until combined and smooth. Transfer this mixture onto a lined deep slice tray - the mixture is quite sticky, so flatten it out with the back of a spoon until flat and even Pop into the freezer for 1-2 hours to set. Chop up into 8-10 bars and keep chilled. Enjoy!
