24.01.2022 With the last Carriageworks Markets this Sat 21st Dec, we'll be releasing what has already been described as the pinnacle of our modern Australian made mead to date. Six months ago we set aside a portion of our best selling mead Dangerous Temptation; a strawberry sour mead made with a pinch of salt - in the vein of a German beer style known as a Gose. Instead of packaging and carbonating using a standard method of force carbonation, we pitched a brettanomyces culture Hunter ...and the Harp spent 12 months building up to feed specially on honey. Pitching this brett culture and allowing 6 months of bottle conditioning, these are now ready for release just in a nick of time to offer as a last minute Christmas gift or as a reward to yourself for another successful year. Highly carbonated with strawberry for days the brett offers stone fruit and funk undertones. 23.01.2022 Yesterday, we judged the Australian Amateur Homebrew competition. Best three meads from each state could be entered so competition was always going to be strong. Today the results were released. Congratulations to the top three and to all who made it this far.

Australian honey is world renowned yet for some reason there's a misconception that mead fermented from Australian honey is medicinal and can have menthol qualities. 22.01.2022 Australia recently saw some changes to labelling laws. Honey thankfully was one of the products that now must contain a county of origin. We think Aussie honey is some of the best in the world, we also think that importing some types of honey we cant get here to be good as well. We don't think falsifying documents, using dodgy marketing and adulterating corn syrup and selling it as honey to be in any way ok.... 22.01.2022 Thanks everyone for the biggest day Hunter and the Harp has ever seen!! We started this journey officially in Dec 2017 when we gained possession of our producer licence two days before Christmas Day! We first launched to the public late Nov 2018 and just over one year on, the final event for 2019 saw a tremendous amount of love! We had our loyal supporters come in droves, introduced modern Australian made mead to first mead timers and even convinced a couple of 'yeh nahs, t...ried mead before, didnt like it' folks as well. We still had a few that even just hearing the word mead turned around and walked away. But hey, today was a true sign that we're doing ok. If we can have the Aussie crowd enjoying a chilled sparkling 10% funky and fruited mead then mead definetly has a future in this country of ours. Until 2020.
21.01.2022 Hunter and the Harp were honoured to give a workshop recently at a local High School. Education for us in the mead industry is so important and to be given the opportunity to work with professional educators was a real blast. Today the teachers got to taste and choose from Red Gum or Orange Blossom honey and other interesting ingredients including cacao nibs, hibiscus petals and finger limes. Looking forward to hopefully tasting these in a couple of months.... The students of 2019 are extremely lucky to have such engaged and thoughtful, considerate and cool teachers to guide them along their journey of learning.

19.01.2022 Lets play a game! 1. Your home is indefinitely in isolation. 2. Bottle-shop runs are no longer considered essential. 3. How long can you last with your home-brew..........?... Here's an original brew we did called Funky Man; a brettanomyces and saccharomyces fermented mango mead we bottle-conditioned WAAAAYYY back in 2015. It ended up making it onto the list at Five Barrel Brewing 1st Birthday Party! After Joel studied mead making with Golden Coast Mead, he returned home with a passion for sour meads. After 5 years in the bottle, it's not as fresh and lively with mango as it was initially and up to a couple of years, the brett effect has also become less funky. The mead today has aged gracefully and has the essence of the beauty she once beheld, combined with the weather and 4 days off, is a beautiful mead for the moment. 18.01.2022 Tomorrow will be our last day folks for 2019. Hunter and the Harp (and Banjo) wish you a safe festive season, travel safe and take care but most importantly cherish those you love! If you are making it to Carriageworks tomorrow, be sure to check out something different from us. We've been waiting for the right moment to release some limited bottles of mead different to our 'normal style'. Check it out: We'll be hand signing 40 bottles only of our 2017 Tart Cherry and 2018 Re...d Gum Bochet. Why are they different? Higher ABV%: both sitting around the 14% mark Still: not sparkling, not petulant, straight up still We hear you though- "Is that really that different though? That's how mead is. Isn't it?" And we answer - "yeh, kinda. But at the moment, still mead is still sitting in the sweet category. And thats why ours are different. they're not sweet." Tart Cherry - We had freshly picked tart cherries hand delivered from (state kept secret) and combined with NSW Red Gum honey. Aiming for a dry mead and knowing the tart cherries needed time for their acidity and tannins to come together, this mead has spent a year bulk ageing and over 18 months in the bottle. Tart, sweet (but not sweet...its difficult to explain), delicious and perfect for Christmas. Limited to 40 bottles. Slow Roasted Red Gum Bochet - The problem we see with bochets is the burnt acidity too common with burning the honey during the reduction process. Taking the moisture out too quickly or waiting to see wisps of black smoke is not how to slow roast the finest honey in NSW. 6 hour slow roasting is. It takes time, believe us to bring together a smooth, rich, balanced mead with amazing marshmallow, toffee and spiced flavours imaginable. See you tomorrow or upon our return 6th Jan. 2020. 17.01.2022 'Embarkment' Release We'll be releasing new meads all this week starting tomorrow. First up is Embarkment. Foraged fruit and herbs, fermented from wild yeast, sur lie ageing and bottle conditioned for 6 months.... Another mead with a story to tell, a mead representing a time and place. A seasonality story, fresh fruits foraged from the land, fermented from yeast contained with that fruit. It's nature, it's balanced and it's delicate. Its' beautiful and fragile and rare but when captured in the right light, is breathtaking. 15.01.2022 Carriageworks Markets this Sat 9th Nov 2019 everyone! Sydneys' most exciting weekly market is going to be on another level this weekend. We'll be releasing our second batch of Saison Siege; named after our daughter Harper Heron; the collective noun for a group of herons= a siege. This batch is once again tickled with bittering hops followed by loads of massive tropical fruit aromas from the post ferment dry hopping. Highly carbonated as expected for a saison, exceptionally ...dry finishing with a SG of 1.001 and an ABV of just over 8%. Limited to 50 bottles We'll also be taking pre-orders from our vault of our 2017 Tart Cherry mead; after searching Australia high and low, we finally found the varieties we we're after. Young, NSW might be the cherry capital of Australia but we needed to look interstate to find the answers to our questions. Plus our 2017 Red Gum Bochet; again selectively withholding release, this mead was produced from the remains of the finest NSW Red Gum honey we have ever experienced to date. Taking the most precious of ingredients; time; we slow roasted the honey for 6 hours producing a deeply intoxicating marshmallow and caramel/toffee that results in a pillowy smooth super soft mead. **Both meads from the vault are still. ALL releases to date from Hunter and the Harp have been from our BLACK label sparkling series of meads. However, in the interests of pushing the realms of modern Australian made meads, these two particular meads are true to style of all of our meads to date, finishing dry, high in acid but with the overarching aim of seeking balance in everything we do whilst highlighting our Australian beekeepers and the honey their bee's produce from this country. Higher in ABV%, both 12-13%, these meads have found their 'sweet' spot. Release date: 21st Dec.
15.01.2022 Bit hard to not have heard already, but for those that have been buccaneering or swashbuckling, here's the jiffy. Hunter and the Harp boarded the good-ship Ale of a Time and collaborated in a full on adventure, following the North Star to its' eternal home above the North Pole and came across kveik. The historians lost count of how many generations of families these yeasts were passed down through. But there's been a renewal and revival into the yeasts/cultures and its' capa...bilities, especially in handling extremely high fermentation temperatures. We made the two meads identical. The only exception being the yeast strains selected. Same honey and hops, same process, same timeframe and flow to culminate into this point where you can sit down and compare, to challenge and digest the differences. You know were to go by now to check it out.

13.01.2022 Right now, NSW is experiencing catastrophic fire conditions. It's unbelievable to explain there's currently a fire stretching form Blackheath in the Blue Mountains all the way north passed Newcastle. The South Coast is entirely on fire as well as the Central coast with fires from Foster to Nambucca Heads and further north of NSW from Coffs Harbour to Yamba. We've lost crew in these fires, countless buildings, an unimaginable amount of native animals have perished and as mead... makers and lovers of all things bee's also cant help but stop and think about our Aussie beekeepers. Beekeepers who live and breath the land they place their hives. Beekeepers who know the land, the environment and the indicators better than most. Beekeepers who's livelihood are right in the middle of the fire grounds. Beekeepers that are fighting to keep alive 50,000 bee's in just one hive. One hive! What about three hundred hives? 15 million animals beekeepers are custodians for. When we talk mead, we truely mean a drink that is closer to the land than any other, involves more aspects of mother nature than any other and is a true representation of the flavour of a country. 13.01.2022 This time last year, we we're about to attend our very first public event. Over two days, we served nearly 5000 people and brought modern Australian made mead to reality. 10.01.2022 Saison Seige was created less than a year ago and one of three in our Collective Series. Seige is the collective noun for Herons and is named after our daughter who's middle name is Heron. The other two releases at the time were Blackberry Charm and CastNet, both which sold out long ago.... Well, we're down to the final bottle of Saison Seige and it has aged wonderfully over the past 7 months. Honey and hops with a French farmhouse ale yeast, all three integrating into one and reinforcing our aim of seeking balance in everything we do. Should we run a competition or let it sell out online? Run an auction starting at $1.00? What does everyone reckon?

07.01.2022 It's a little known fact that Australia is home to native bee's. Many of which are solitary. Some are even stingless! Collecting honey from these endemic species, known as 'Sugarbag honey' isn't as viable as the introduced honey bee Apis Mellifera but their role as pollinators is just as important. He's a gifted guitarist most renowned in the band Frenzal Rhomb who then ventured successfully into radio hosting. So many mornings, the youth were listening to the doctor on their way to work, which then turned into the evenings on our way home. For over a decade we listened. Like all of our meads, suited perfectly to the Australian climate, the culture and the country we all live in. The flavor is amazing, it is so crisp and I may or may not have just polished off the bottle. I LOVE all things chai. And this is one of the nicest meads I have ever tasted to date."
