25.01.2022 Our second tunnel is going up with the addition of ground screws! What an invention! With the recent wind and our tunnel nearly blowing away, we had to invest in some ground screws, which Oli ingeniously made work with our current tunnel structure (I actually did nothing and just jumped in for this photo ). It’s been a windy one today and the tunnel looks solid!

The take home from the brainstorming session was that in order to be sustainable in farming as people, you need to find the right farming business model that is aligned with your goals and stage in life. It needs to be ‘fit for purpose’ thanks Bec for that phrase! Just because you ‘could’ do something doesn’t necessarily mean you ‘have’ to. We did a workshop on pests and disease on farms and thanks so much to @heirloomtony for teaching us about your approach. Every dad would want this, right?! ‘Eggy’ tofu cube salad with 'any greens' sunflower seed pesto, hummus and home grown mung bean sprouts and pea shoots. @huskigreens at #farmgatemarket has handfuls of micro greens if you’re not a mung fan. .... Time to admit that Sara @shisodelicious is the soulful creator of this Dad salad. Anytime salad, really. . Pesto recipe in the slides. Last week I discovered I can make #pesto with humble #sunflower seeds (toasted) and literally any greens. . So good and simple - a real cupboard staple recipe, well, as long as you have some greens! . Pesto recipe in the slides. I add 1/2 tsp white #miso to the pesto for a 'cheesy' touch but you can use any miso, nutritional yeast, or leave it out. Forgot to add fresh garlic to the recipe slide btw... . ‘Eggy’ tofu cubes . 250g tofu (medium or firm) I used @theartyvegan 2 tbsp all purpose flour (or, gluten free or rice flour) 1 tsp black indian salt kala namak (or tsp sea salt) tsp turmeric powder Black pepper to taste A few tablespoons oil to fry, I used odourless coconut oil . Cube the tofu in 2-3cm cubes (no need to press it), mix the flour, salt, turmeric, and pepper in a bowl and toss /gently press the cubes to make the moisture from the tofu bind enough flour to make a thin 'batter' around each cube. Fry on low heat, turning the cubes so all sides get browned. Add more oil if it looks dry. Drain on a piece of paper or kitchen paper towel. . To assemble the salad: . Spread a layer of hummus, top it with a generous layer of pesto, add salad leaves of choice, blanched mung bean sprouts and finally the cubes and any other salad veggies KAPOW. See more
