20.01.2022 J A M is a thick spreadable condiment made from chopped fruit and sugar. Jam’s are best cooked quickly at a high heat to preserve the taste and vibrant colour of the fruit. They rely on pectin, a natural fibre found in most plants that helps cooked fruit thicken in texture. Usually a jam contains as much sugar as it contains fruit. Make your own fruit flavoured yoghurt with a spoonful of jam, add some when preparing a meat gravy or use as a glaze on chicken legs. Fill pretty much anything sweet with jam: turn cookies into sandwich cookies, make hand pies, whip up a galette or make an impressive tart. Nothing beats spreading jam on homemade scones for afternoon tea. #iambatchmade

In my house, it is strictly rationed otherwise it’s eaten directly out of the jar! Serve with scrambled eggs or your weekend BBQ. Our Spiced Quince preserves are a Tunisian recipe. The quinces are slowly cooked until vibrant pink and spiked with chilli, lemon, cinnamon and other fragrant spices. 13.01.2022 C H U T N E Y is a type of jam flavoured with vinegar and spices. Savoury or spicy, this condiment originated in India where it is served with rice, naan or dosa breads and curries. Add chutney to a cold meat sandwich, mix some into your sausage roll or rissole filling when preparing, add it to a cheese or cured meat platter or mix it with greek yoghurt to make a dip.
