21.01.2022 Here's to good health!! Roast Veg on a bed of Hommus Ingredients... Roast vegetables- Onion, Zucchini cut into long pieces, Carrots in long strips Pumpkin Sweet potato Portobello Mushroom Beetroot-if desired Prepare vegetables, and drizzle with olive oil and a pinch of mixed herbs drizzled over the top. Cook for 20 mins in moderate oven, and add mushroom drizzled with Olive oil and cook for a further 20 mins. After this time check they are cooked but not soggy. Hommus 1 x can chickpeas drained and rinsed cup (60 mls) fresh lemon juice cup (60 mls) well stirred tahina 1 small clove of garlic minced, or 1 tsp from a jar 2 Tblsp extra virgin olive oil (30 ml) tsp Cumin (if desired) Salt to taste 2-3 tsp water if too thick In food processor combine Tahini and lemon juice and process for 1 min. Scrape down side and blend 30 more seconds. Add Olive Oil, cumin, garlic and salt and process for 30 secs. Scrape sides down. Add the chick peas and process 1 min. Scrape Sides down and add remaining chickpeas and process until thick and smooth-approx 1-2 minutes Lay down a bed of hommus and load veggies up on top, in a neat fashion! Add a dash of salt and pepper and you’re done!
19.01.2022 Brigadeiro Recipe (Traditional Brazilian Fudge Balls) 1 can of sweetened condensed milk 3 Tbsp cocoa powder 1 Tbsp butter ... Chocolate sprinkles to garnish Small patty pans In a saucepan combine the condensed milk with cocoa powder. Add the butter and on a medium-high heat stirring constantly. When starts bubbling lower the heat to minimum and keep stirring well. When it thickens you will see it unsticking the bottom. Pour the mixture on a plate and let it cool down. When it is cool enough to handle, grease your hands with butter and make little balls, roll it on the chocolate sprinkles and place it on the patty pan.

Brazilian Fish Stew (Moqueca Baiana) A traditional Brazilian dish in a delicately flavoured coconut base broth with terrific depth of flavour that belies the relatively short ingredient list! The broth is quite refreshing and not too rich, unlike many strong flavoured, rich coconut based curries. It can also be made as a seafood stew with prawns and calamari. Prep Time... 10 mins Cook Time 25 mins Total Time 35 mins Course: Fish, StewCuisine: BrazilianKeyword: brazilian fish stew, fish stew, moqueca baiana Servings: 4 - 5 Calories: 367kcal Author: Nagi | RecipeTin Eats Ingredients Fish 1 lb / 500g firm white fish fillet , no skin, cut into 1"/2.5cm cubes 1 tbsp lime juice 1/4 tsp salt Black pepper 1 tbsp olive oil Broth 1 1/2 tbsp olive oil or coconut oil 2 garlic cloves , minced 1 small onion , finely diced (brown, yellow or white) 1 red capsicum / bell pepper (large), halved and sliced 1 1/2 tsp sugar (any) 1 tbsp cumin powder 1 tbsp paprika 1 tsp cayenne pepper (optional) 1/2 tsp salt 14 oz / 400ml coconut milk 14 oz / 400ml canned crushed tomatoes 1 cup fish broth/stock (or chicken or vegetable) Finishes 1 - 2 tbsp lime juice , plus more for serving 3 tbsp roughly chopped fresh cilantro / coriander , plus more for serving Instructions Fish Combine the fish, lime juice, oil, salt and pepper in a bowl. Cover with cling wrap and refrigerate for 20 minutes. Heat the 1 tbsp olive oil or coconut oil in a large skillet over high heat. Add the fish and cook until just cooked through and light golden brown. Remove from the skillet and set aside. Broth Reduce the stove to medium high and heat 1 1/2 tbsp olive or coconut oil in the same skillet. Add the garlic and onion and cook for 1 1/2 minutes or until the onion is starting to become translucent. Add the bell peppers and cook for 2 minutes. Add the remaining Broth ingredients. Bring to simmer, then turn down to medium. Cook for 15 to 20 minutes or until it thickens. Adjust salt and pepper to taste. Return the fish to the broth to reheat - about 2 minutes. Add some lime juice. Garnish with cilantro/coriander and serve with rice. Notes 1. Coconut milk - full fat is best. 3. As with every traditional dish in this world, there are many variations of Brazilian Fish Stew! This recipe is a mish mash of various recipes that stays true to the traditional recipe but slightly tweaked.

09.01.2022 Johns Spinach Lasagna Ingredients Instant lasagna sheets, spag sauce, 450gms quark,thawed and drained spinach cubes, parmesan cheese , shredded colby cheese... mix quark, spinach and 1/4 cup parm cheese to make filling. Layer sauce on bottom. then sheets,filling,sheets,sauce, shredded cheese, sheets, filling,sheets, sauce shredded cheese,sheets,filling,sheets,sauce,shredded cheese. Cover and bake for one hour at 180 degrees Remove cover last 5 minutes to brown cheese. Let sit for 10 mins and then serve with a green salad ! Enjoy !!
