Not only does it ta...ste good, including Vitamin C with pork helps the body to absorb non-haem iron from a meal. Check out the recipe from Australian Pork below, and be sure to save it for later! Ingredients: 600g Otway pork belly rashers, 1cm thick 2 teaspoons oil 1 brown onion, sliced 4 cloves garlic 6cm piece ginger, cut into fine batons finely-grated zest and juice of 4 oranges 2 cups chicken stock 8 chat potatoes Method: 1Use a sharp knife to cut the belly rashers into fine pieces, about 1 cm wide. 2Pour the oil into a large lidded saucepan and fry the pork pieces for 5 minutes, until browned. 3Add the onion, garlic, ginger, zest, juice, stock and potatoes. If using a slow-cooker, transfer at this stage to the cooking insert. 4Fit the lid then cook gently for 3 hours, until the meat is tender. If using a slow-cooker, cook on low heat for 6-8 hours. 15.01.2022 Important Market Update To our valued customers and community, While Victoria moves into a Stage 4 circuit breaker due to the COVID-19 pandemic, Prahran Mar...ket's food and drink Traders will remain open for customers buying groceries and take-away who live within 5km of the Market. During this time, opening hours will remain as normal. Our delivery service will also continue to operate as per usual. Unfortunately, our non-food and personal service Traders are required to close for the duration of the circuit breaker, commencing 11:59 pm tonight. On current advice, these Traders include Prahran Garden Centre, Flawless Flowers, Clara's Flowers, Prahran Market Hardware, Donnally Variety Shop, Shop Neutral, Prahran Market Shoe Repairs, Shellz Brow Bar, and Barber of Prahran. We will be sad to see them temporarily close through absolutely no fault of their own. Some of these Traders will continue to offer their service on Food Lovers' Direct and through their own delivery services. Please note there will be no option to Click & Collect at this time. Other key changes are as follows: Masks or face coverings MUST be worn throughout the Market, subject to medical exemptions. Only one person per household is allowed to be shopping, once a day, according to Government guidelines. Market Square will be closed for dine-in. Restaurant and cafes open for take-away only. If you are purchasing take-away food items, please do so and eat at home. Our bands have been cancelled this weekend. Market density quota has been reverted back to 1 person per 4 square metres. 10.01.2022 Crumbing your pork cutlets using fresh herbs and parmesan is an easy way to change up your pork dishes (and add a little crunch!) at home. Try our recipe below ... Ingredients (serves 4): 4 x 200g pork cutlets cup plain flour Sea salt Freshly ground pepper 2 eggs 2 cups fresh breadcrumbs or panko crumbs 40g parmesan, finely grated bunch sage, leaves chopped 1 lemon, finely grated zest 125ml ( cup) extra virgin olive oil Lemon wedges, to serve Method: 1 Lightly pound the cutlets with a meat mallet (or rolling pin) to flatten a little. 2 Have ready three wide shallow bowls, one with the flour, seasoned with salt and pepper; one with eggs, lightly beaten; and another with the breadcrumbs, combined with the parmesan, sage and lemon zest. 3 Dust each cutlet lightly in flour. Then dip into the egg to coat all over, draining off the excess. Finally dip each cutlet into the breadcrumbs, turning to coat evenly. Transfer to a plate. Repeat with the remaining cutlets. At this point, the cutlets can be stored in an airtight container in the fridge for up to a day before cooking. 4 Heat the oil in a large non-stick frying pan over a medium-high heat. Add the cutlets and cook for 3 minutes (until golden brown) reducing the heat if crumbs are starting to burn. Turn over and cook another 3 minutes until golden brown and just cooked through. 5 Serve with lemon wedges, a green salad and roast, or boiled potatoes. 01.01.2022 Its times like these that we look to our freezers and say: "What would I do without you?" But, when freezing pork there are a few storage tips we should all fo...llow: Always use a freezer bag or airtight container prior to freezing, removing as much air as possible. If storing steak, chops or multiple large items, place food-safe plastic between layers or wrap individually in separate bags. This makes defrosting easier and will prevent freezer burn. Pork can be kept for up to 6 months depending on how its wrapped and stored. Frozen pork should always be thawed before use. Whenever possible, slow-thaw pork in the fridge for 24-48 hours prior to cooking. Never thaw meat in the sun or warm water. If urgent thawing is required, microwave defrosting mode is the safest method." See more
