24.01.2022 Gluten free doesn't have to mean indulgent free! Warm up your winter mornings with this French toast recipe inspired by Henley's Wholefoods Preparation time: ...10 minutes (plus 30 minutes soaking) Cooking time: 17 minutes Serves 2 INGREDIENTS 4 slices Helgas Gluten Free Wholemeal bread 3 eggs 1/3 cup almond milk Pinch of salt 50g walnuts 1/3 cup maple syrup, plus extra to serve 4 rindless rashers bacon 2 small bananas 1 heaped tablespoon coconut sugar METHOD 1. Place eggs, almond milk and salt in a bowl and whisk until combined. Place bread into lamington pan or similar rectangular dish. Pour batter over bread. Leave to sit and soak in the eggy goodness for 30 minutes, gently turning after 15 minutes. 2. Meanwhile, heat oven to 1800C. 3. Line baking tray with baking paper, scatter with walnuts and pour over maple syrup. Stir to coat nuts evenly. Roast 12 minutes or until nuts are toasted and caramelised, stirring occasionally. Set aside. Turn off oven. 4. Heat a large non-stick frying pan over a medium heat. 5. Cook bacon 2-3 minutes each side. Remove from pan and keep warm in oven. 6. Remove bread from the batter, cook both sides until golden brown. Remove from pan. 7. Cut bananas in half lengthways and coat inside lengths with coconut sugar. Place in pan, sugar side down and cook until golden and sticky. 8. Now its time to assemble the stack! Layer from the bottom up: bread bacon banana nuts bread bacon banana nuts then drizzle with the extra syrup.

19.01.2022 "You can't leave the table until your plate is clear." How do you #SavourTheFlavour? Should not be a problem with this tasty Chicken Cacciatore recipe (Serves 4...) 2 tbs olive oil 2 tsp sweet paprika 8 chicken thigh cutlets (skin on, bone in) 2 brown onions, halved, thinly sliced 2 garlic cloves, crushed 1 cup red wine 2 x 400g cans cherry tomatoes 1 chicken stock cube, crumbled cup black olives 2 bay leaves 2 sprigs fresh rosemary leaves 2 tbs chopped flat-leaf parsley, to serve 400g packet La Famiglia Traditional Garlic Bread 1. Preheat oven 150C fan forced. Combine oil and paprika in a large bowl. Add chicken, turn to coat, using your hands to rub the spiced oil all over the chicken. Season. 2. Heat a large frying pan over medium-high heat. Add half the chicken, skin side down, cook 2-3 minutes until golden. Turn and cook further 2 minutes. Remove to a roasting pan, skin side up. Repeat with remaining chicken. 3. Add the onion and garlic to the pan, cook, stirring often for 3 minutes. Add wine and bring to the boil, boil 2 minutes or until wine reduces by half. Add tomatoes, stock cube, olives, bay leaves and rosemary, bring to the boil, boil 3 minutes. Pour the sauce over the chicken. Cover tightly with foil and bake 2 hours until the chicken is almost falling from the bone and the sauce thickened. Remove from oven, stand covered 15 minutes. Remove bay leaves and rosemary sprigs. 4. Increase oven to 200C, separate slices of bread. Place onto a tray, butter side up. Bake in oven for 10-15 minutes or until light golden. Remove from the oven. Scatter parsley over the chicken cacciatore and serve with La Famiglia garlic bread. Stove top option method 1. Combine oil and paprika in a large bowl. Add chicken, turn to coat, using your hands to rub the spiced oil all over the chicken. Season. 2. Heat a large frying pan over medium-high heat. Add half the chicken, skin side down, cook 2-3 minutes until golden. Turn and cook further 2 minutes. Remove to a plate, repeat with remaining chicken. 3. Add the onion and garlic, cook, stirring often 3 minutes. Add wine and bring to the boil, cook 2 minutes until wine reduces by half. Add tomatoes, stock cube, olives, bay leaves and rosemary, bring to boil, boil 3 minutes. Return the chicken, poking it under the sauce. Reduce heat to low, cover with a tight fitting lid. Simmer for 45-60 minutes or until the chicken is almost falling from the bone and the sauce thickened. Remove from oven, stand covered 15 minutes. Remove bay leaves and rosemary sprigs. 4. 15 minutes before the chicken finishes, separate slices of bread. Place onto a tray, butter side up. Bake in a preheated 200C fan forced oven for 10-15 minutes or until light golden. Remove from the oven. Scatter parsley over the chicken cacciatore and serve with La Famiglia garlic bread. # SavourTheFlavour

Here is a tasty recipe for Caponata Prawns (Serves 4) 5 tablespo...ons olive oil 600g (2) eggplant, unpeeled, cut into 2cm cubed 1 tsp dried oregano 1 red onion, finely chopped 2 large garlic cloves, crushed 2 tbs tomato paste 2 tbs drained capers cup green olives, pitted 3 tbs red wine vinegar 600g (5) vine ripened tomatoes, chopped 1/2 cup parsley leaves, chopped 500g (16) green prawns, peeled, deveined, tails intact 100g feta 270g packet La Famiglia Garlic Bread Slices 2 tbs pine nuts, toasted 1. Heat 3 tablespoons oil in large frying pan over high heat. Add eggplant and oregano. Sauté over high heat, shaking pan occasionally for 5 minutes until eggplant is light golden. Reduce heat to medium, add onion, garlic and tomato paste, cook, stirring often for 3 minutes until soft. Add capers, olives and red wine, cook 2-3 minutes until red wine has evaporated. 2. Add tomatoes, cup water and half the parsley. Season. Cover and simmer for 15 minutes until tomatoes collapse. Poke in the prawns. Cover and cook 1-2 minutes until prawns change colour. Crumble over the feta. 3. Meanwhile, preheat oven to 200C. Place garlic bread slices, buttered side up, onto baking tray. Cook 10-15 minutes until golden and toasted. 4. Sprinkle the remaining parsley and pine nuts over the caponata. Serve with La Famiglia garlic bread.
