In a large pot of boiling, salted water cook the linguini according to packet directions. 2. Meanwhile, in a nonstick frying pan, sauté the chicken until golden, 4 to 6 minutes. 3. Add the cream and reduce heat, add basil pesto and simmer for 5 minutes. 4. Add the linguini and toss to coat in the yummy sauce. We used Sanitarium... - 2 tbsp maple syrup - 1 cup rolled oats - 4 tbsp unsweetened cocoa powder - 1 tsp vanilla essence How to make it: 1. If you can, place all the ingredients into a cup the night before to allow the oats to soak. This isnt absolutely necessary, but helps blend the mixture. 2. Place all ingredients in a blender and blend until smooth. 3. Pour the smoothie into a pot and heat. Bring to a boil, then simmer. 15.01.2022 We're keeping it simple this Monday dinner time. Its a super easy Asian inspired chicken drumstick recipe: Only 4 ingredients Only 10 mins prep time... The whole family will love it Ingredients: - 16 chicken drumsticks - cup Kecap Manis (a sweet soy sauce) - 1 tbsp finely grated ginger - 3 tsp sesame seeds Method 1. Line a large baking tray with baking paper. 2. Into a bowl combine Kecap Manis, ginger and 2 teaspoons of sesame seeds. 3. Use a small sharp knife to make two cuts, about 3 cm long and 1cm deep, in the thickest part of each chicken drumstick. Place the drumsticks onto the prepared tray and season with cracked pepper. 4. Brush liberally with the marinade, coating the drumsticks completely. 5. Cover the dish with cling wrap and put the marinated chicken in the fridge for 20 minutes. Preheat the oven for 200C. Bake the drumsticks in the marinade for 45 minutes or until cooked through, turning (with a pair of tongs) and basting the drumsticks every 10 minutes. On the last baste, sprinkle with remaining teaspoon of sesame seeds. #WhitesIGA #IGA #IGARecipes

14.01.2022 This dreary weather is the perfect excuse for something quick, easy and comforting. 10 mins and @4ingredients is all you need to put together this delicious family favourite that will warm your belly and awaken your senses. Ingredients: - 4 lamb backstraps - 500g cherry tomatoes... - 1 lemon - 180g packet of haloumi, sliced 1cm thick Method 1. Bring the lamb to room temperature before cooking, to help cook quickly and more evenly. Season generously with sea salt and cracked pepper. 2. Heat a large non-stick frying pan, over medium high heat, add 1 tbsp. olive oil. Cook the backstraps for 4 minutes. Turn. Cook the second side for a further 3 minutes. Remove to a cutting board to rest for 5 minutes before slicing to serve. 3. Into the pan juices add the tomatoes, season with salt, pepper and a splash of lemon juice. Sauté, shaking pan frequently, until tomatoes soften and skins just begin to wrinkle, about 2 minutes. Into the pan, place the haloumi slices. Cook for 1 to 2 minutes, gently turn and splash with a good squeeze of lemon juice. When golden in colour, remove from the pan and serve on a platter with lamb and tomatoes. #WhitesIGA #IGA #IGARecipes

08.01.2022 This low-carb Mediterranean Stuffed Capsicum recipe is a guaranteed crowd pleaser - AND is the perfect celebration of Spring. Give it a try tonight Ingredients - 2 large red capsicums, cut in half lengthways (membranes and seeds discarded) - 1 onion, peeled and chopped... - 500g lean beef mince - 1 cup (250ml) pasta sauce Method 1. Heat a little olive oil in large nonstick frying pan, add onion; cook, stirring, until tender. 2. Add beef and cook, stirring, until browned. 3. Add pasta sauce, bring to a gentle boil. Reduce heat; simmer, uncovered, 10 minutes, stirring occasionally, season to taste. 4. Meanwhile, line a baking dish with baking paper. Lay the 4 capsicum halves inside. 5. Fill each with the mince mixture. Bake, uncovered, for 40 minutes or until capsicums are tender. Tip: Add extra veggies to the mince, such as diced celery, garlic and parsley and before baking sprinkled with a little Parmesan cheese.

06.01.2022 Spring is here Start the beginning of the new season with #IGARecipes delicious Roast Dijon Chicken with your favourite Spring Veggies Ingredients: - 1 whole chicken, cleaned and dried - 2 lemons, juiced... - 2 tbsp Dijon mustard - Your choice of Spring Veggies (we used potatoes, pumpkin, baby broccoli and asparagus!) Method 1. Preheat the oven to 200C. Season the cavity with sea salt and cracked pepper. 2. Peel and quarter 4 washed potatoes and 4 large pieces of pumpkin. Then place both into the roasting pan. 3. Prepare the Dijon mixture by whisking together lemon juice, Dijon mustard and 1 tablespoon of olive oil. Season with salt and pepper. Stuff the squeezed lemons into the cavity and tie the legs together with kitchen string. 4. Place the chicken on top of the vegetables and coat with the Dijon mixture. Add cup of water (or chicken stock) to the bottom of the pan. 5. Bake for 1 hour. Add the baby broccoli and asparagus and baste the chicken and the veggies with pan juices. Bake for 15 to 20 minutes or until the veggies are tender and the juices run clear when the chicken thigh is pierced with a skewer. Tip: As the chicken roasts, add the vegetables depending on their thickness and cook time. Potatoes, carrots and onions can take the heat but sliced broccoli and asparagus should go nearly at the end. Serve your succulent chicken and spring vegetables with some baked IGA Dinner Rolls and white wine for the perfect meal #WhitesIGA #IGA #IGARecipes #4Ingredients

04.01.2022 The perfect dish to welcome in Spring . So fresh, so flavoursome and full of the most delicious veggies. Ingredients: - 1 tbsp olive oil - 1 medium brown onion, diced... - 4 cloves garlic, minced - 1 cup green beans, trimmed and halved - 1 can cannellini beans, rinsed and drained - 1 red capsicum, sliced - 1 can diced tomatoes, drained - 2 tsp smoked paprika - 1 cup short-grain white rice - 2 cups vegetable stock - 1 cup marinated artichoke hearts - cup pitted green olives - Salt and pepper to taste To serve: - 2 tbsp extra virgin olive oil - Freshly squeezed lemon juice - Fresh chopped parsley How to make: 1. Heat the oil in a frying pan and add the onion and capsicum. Cook over a medium heat for a couple of minutes, until slightly soft. 2. Add the garlic and tomatoes and cook until mixture begins to darken and thicken slightly, about 2 minutes. 3. Add the green beans, cannellini beans and smoked paprika and mix to coat. Turn the heat down to low. Pour in the rice, vegetable stock, and plenty of black pepper. Mix carefully once to make sure everything is evenly distributed, then stop stirring. Arrange the artichoke hearts and olives on top of the paella, and cover with a lid. Leave to cook over a low heat for around 25-30 minutes, or until the rice is fully cooked. 4. Serve topped with a drizzle of extra virgin olive oil, a squeeze of lemon juice, and some fresh parsley. #WhitesIGA #IGA #IGARecipes

02.01.2022 Crumble is the ultimate comfort food and weve got a yummy twist on this family favourite. Ingredients: For the filling - 4 pears, Cored and cubed... - 4 stalks of rhubarb, diced - 2 tbsp water - 2tbp of brown sugar - tsp of cinnamon For the crumble - 2 tbsp honey - 2 tsp margarine (we love Community Co) - 1 cup muesli (the untoasted kind is the best!) - cup wholemeal flour - 50g of roasted hazelnuts How to make it: 1. Preheat oven to 180 degrees 2. Core and chop the pear into small pieces. Dice the rhubarb into roughly the same size pieces. 3. Dry roast hazelnuts in a big pot and then set aside in a bowl. 4. Place all filling ingredients in the pot and cook for 8-10 minutes or until soft. Transfer to an ovenproof dish. 5. Place margarine and honey in a dish and microwave on high for 20 seconds 6. Combine muesli, Hazelnuts and flour in a separate bowl, then stir in the honey mix, and mix until small crumbs start to form. 7.
