22.01.2022 Slow Cooker Chicken Diane Drumsticks Today I'd like to share a recipe for 'Slow Cooker Chicken Diane Drumsticks'. This recipe can be prepared & cooked using ingredients from your pantry & fridge. With only 15 mins prep time these slow cooked drumsticks Diane pairs perfectly with chicken & potatoes. For this dish you will need ... Ingredients 1& 1/2 tablespoons olive oil 8 chicken drumsticks 600g baby potatoes cut into quarters 1 brown onion halved thinly sliced 2 cloves garlic crushed 1 tablespoon tomato paste 1 tablespoon worcestershire sauce 1 tablespoon dijon mustard 1/2 cup chicken stock 300ml cream 200g button mushrooms thickly sliced fresh chopped flat leaf parsley to serve Crusty bread to serve Method 1 heat 1 tablespoon of olive oil in a large nonstick pan over medium/high heat,cook the drumsticks turning often for 5 mins til nicely browned,transfer to the slow cooker & add quarter potatoes. 2 add remaining oil & reduce heat to medium/low then add onions & garlic stirring often for 5 mins then add flour & tomato paste,cook & stir for 1 min. Stir in worcestershire sauce & mustard then gradually add the stock stirring constantly until mixture is smooth then stir in the cream. 3 pour the mixture over the chicken,cover & cook on low for 4 hours,stir in mushrooms & cook for a further 1 hour or until chicken & potatoes are tender. 4 to serve place 2 drumsticks on a plate with the crusty bread & sprinkle with the chopped parsley. Talk about easy peasy,this is a meal that the whole family will enjoy. 11.01.2022 I'm always asked 'what is your favourite dish you like to cook' ?? Well the answer to that is something new. This is a dish I cooked last night as 1 of the main course's for 10 pax at the historic Alymerton House 8n Mittagong. The dish 'Chicken Marengo' was created by Napoleon's Chefs after the Battle of Marengo in 1804,from ingredients that were on hand to cook. A perfect evening finished off with Martin cooking Crepe Suzette's at the table for dessert. 06.01.2022 Just received this Testimonial from Kieran & Meg who we Catered for a full Vegan wedding reception recently You should hire Martin and Steve to cater your wedding. Why?... Through two canceled wedding dates (thanks COVID!) all the way to the third, A Class Catering was our rock. Our wedding was first canceled because of lockdown and then canceled again because our venue decided our postponed date was still too risky. Martin and Steve met with us multiple times to discuss options and explain the new and changing rules, and they offered alternatives and understanding as we scrambled to get our day together on short notice. And that was before the actual day. When the wedding came, they impressed us even more. When Martin and Steve arrived in the morning a weight was lifted off my shoulders. Martin took care of so much of the remaining wedding day organization all while helping Steve whip up amazing dishes from scratch. Throughout the night every dish was delicious and our guests couldn't stop complimenting the food. When we returned from having photos taken all we heard about were how good the hors d'oeuvres we missed out on were. These complements meant even more as they came from meat-eaters about an entirely vegan menu. We're so happy we chose A Class Catering because Martin and Steve worked incredibly hard to make our day so special. Let them do the same for you.

05.01.2022 Savoury Mince Recipe Sick of cooking Spag Bol for the family dinner ??? Well here's a recipe that you can prepare & cook by just using the ingredients that's in your pantry & fridge during these times in lockdown. I give you Savoury Mince da da,this recipe is so easy to prepare even the kids can help in preparing this meal. This recipe was taught to me by my mother when I was around 10 years old,which started my love affair of food & inspired me to become a Chef.... So now to the recipe Ingredients 2 tablespoons olive oil 1 large brown onion chopped 2 cloves garlic crushed & chopped 500g beef mince 100g button mushrooms sliced 1 large carrot diced 2 celery stalks trimmed & diced 400g can diced tomatoes 1/2 cup water or stock or red wine (I'll be using stock) 1 tablespoon tomato paste 1/4 cup fresh chopped flat leaf parsley 1 long baguette cut into 4s & halved toasted Mixed salad leaves to serve Method 1 heat oil in a large frying pan or electric frying pan to medium,saute the onions & garlic for 2-3 mins until onions are tender. 2 add mince to the onion mixture & cook for 4-5 mins until well brown,breaking mince up with a spoon as it cooks. 3 stir in mushrooms,carrots & celery mixing well & cook stirring for 5 mins. 4 stir in tomatoes,stock & tomato paste,season with salt & pepper then bring to the boil & reduce heat & simmer for 10 mins or until veggies are tender & stir in chopped parsley. 5 to serve ladle the mixture over the toasted baguettes,with a side of mixed salad leaves & sprinkle with the remaining chopped parsley. And there you go Savoury Mince with toasted baguette & mixed salad leaves, a delicious meal for the whole family cooked in less than 30 mins.
