14.01.2022 Tomatoe meat and vegetable sauce is a family pleaser. Chicken & Lean beef mince Leeks, onion, garlic, fresh tomato’s,bay leaf basil black pepper & olive oil. Grated carrot, diced eggplant & zucchini.Cook for 35 mins . Serve with fresh Parma cheese

Any pizza dough recipe , hot salami , fresh tomato sauce, fresh basil, fiore di latte cheese, oregano , drizzle of olive oil, Kalamata olives and in the oven. Once it’s cooked and ready to serve put a hand full of fresh wild rocket in the center of the pizza and serve. I also use a pizza stone to cook my pizza on. ... Buon appetito

06.01.2022 Eggplant Parmigiana is one of my favourite side dishes or just a super easy antipasto . **INGREDIENTS** 3 eggplants... Salt flakes 2-tablespoon extra-virgin oil Fresh basil Ground pepper cup grated parmigiana cheese 2 garlic gloves 1 canned peeled & crushed tomatoes **METHOD** 1.Cut the eggplant lengthwise into inch slices. 2.Lay the slices of eggplant on top of each other, salting well between each layer. 3.Cover with a plate and place a heavy weight, such as a pot or a can of food, on the top. Leave to sweat. 4.Heat oil in a frying pan over medium heat, add the Eggplant and lightly fry till golden. 5.Place cooked eggplant on a flat dish and dress the top with tomatoes and cheese. 6.Garnish with fresh basil to serve.
