16.01.2022 Our new veggie gardens are coming along well. We’re growing zucchinis, parsley, coriander, sage, spring onion. Basil, maybe, but it was a bit cool when it went in, so we’ll see if it shows up Everything from the garden ends up on the plate of one of our lovely big pub meals. We brought this to life during the quieter months this year. We used as many recycled materials as possible and the wall hanging pots are self watering from Eco R Us. Every little bit counts

16.01.2022 What an awesome sunset after a night and day of rain

03.01.2022 Our Innamincka Relish Recipe There’s just something about proper old-fashioned country condiments! Our Innamincka relish is a bit of an heirloom recipe, passed down through the family since at least the 1930s and still made in the Innamincka Hotel kitchens today. Join us for lunch or dinner to try it alongside a beautiful pub meal this weekend. Or, if you can’t make it out to us just yet, give it a go at home.... If stored and sealed properly it should keep for 6-12 months, and yep this makes about 6 litres of relish. You could divide it into a sensible amount, but these old recipes are best made in batches big enough to serve a homestead of hungry people! _____________________________ Relish Recipe Circa 1930 3.6kg tomatoes 1.8kg sugar 1.4 litre vinegar 2 tablespoon curry powder 2 tablespoon mustard powder 6 large brown onions or 12 small brown onions Cut tomato & onion, sprinkle 4 small handfuls of salt and leave overnight Drain liquid & add vinegar and boil Add sugar, curry powder, mustard powder as a paste with flour (we use cornflour maize to make it gluten free) to thicken. Cook until ready. Makes around 6 litres of finished relish.

03.01.2022 The Cooper is looking beautiful after our recent rainfall. Our cruises are paused for this year, but we’d still love to see you out there on the water. Rent one of the canoes available from us at the pub, or bring your own SUP like Georgie and Mallee Georgina McQuade

02.01.2022 Took a day trip with some co-workers to the magnificent Malkumba-Coongie Lakes. We were in awe of the birdlife and beautiful surrounds. So we thought it was only the right thing to do but share!
