23.01.2022 Here we go, rice cooker lentil shephards pie ! If you don't have a rice cooker , feel free to use a slow cooker, or cook on the stove top. A slow cooker has the same premise of "set and forget", but it takes a lot longer of course. Cooking lentils on the stove top is a great option too, but you just have to keep your eye on it. To a rice cooker, drizzle olive oil on the bottom and add.... -1 onion chopped -3-4 cloves of garlic (or more!) chopped -2 stalks of celery -1 capsicum chopped -1 carrot, chopped -3-4 mushrooms -Zucchini, tomato, etc-Anything that you have in your fridge, the more veg, the better! - 2 cups of spinach or kale -1 Cup of lentils -2 cup of water or vegetable broth -1 can of diced tomatos -2 tablespoons of tamari or soy sauce -1 teaspoon of cumin -1 teaspoon of smoked paprika -1 teaspoon of mixed herbs -Salt and pepper to taste -Many people like to add Worcester sauce to the lentil mix (if not vegetarian/vegan) Give everything a good mix, and set and forget! When the rice cooker turns off, have a look at the consistency and if all the liquid is absorbed and lentils are cooked, then you're done! If the lentils need more time and you want a more saucy/gravy like consistency, add a bit more water and turn the rice cooker to "cook" again. For the mash -Add 3-4 diced sweet or white potatoes and 3 cloves of garlic to a pot and cover with water. Boil until cooked. Drain potatoes and add a glug of olive oil, a splash of any plant based milk you may have (I used coconut milk) and salt and pepper and MASH! Put lentil mix in a baking dish and cover with mashed potatoes. Smooth with the back of a wooden spoon and then decorate with a fork. Sprinkle mixed herbs on top! Bake at 180c for 40 minutes. 03.01.2022 Breakfast Are you a breakfast person? Some people are, and some people aren't! In general, eating a meal in the morning is a great way to balance blood sugar, kickstart your metabolism and boost energy levels. But it isn't for everyone! If you wake up with no appetite, than having a glass of warm water with fresh lemon to start your day is a wonderful way to get your digestive juices flowing. If you are intermittent fasting, than breakfast is an easy meal to skip to ke...ep your fast going until later morning. Like anything to do with nutrition, we take a holistic and individual approach, there is no one size fits all method! Now, here is my recipe for Tahini Olive Oil Muesli (adapted from @adeenasussman -2 cups of rolled oats -1 cup of chopped nuts (I used walnuts, but anything you have on hand!) -1/2 cup of shredded coconut -2 tablespoons of pumpkin seeds -2 tablespoons of hemp seeds -2 tablespoons of sesame seeds -2/3 cup of tahini -1/2 cup of olive oil -2 tsp vanilla -1/4 teaspoon of sea salt -1/4 cup of silan (date syrup)- Optional Preheat oven to180c. Mix all dry ingredients in a large bowl. Mix all wet ingredients in a small bowl. Add wet ingredients to dry and combine. Spread on a baking sheet and bake for 25 minutes, stirring every 5 minutes to ensure no burning. Let cool completely and enjoy with dried fruit, yogurt or plant milk!

02.01.2022 Following up on our lentil shepherds pie recipe from yesterday, I thought I would share some of the health benefits of the humble lentil. Firstly, lentils are a fabulous pantry staple! In these times when we are shopping less, and working with what we have more, lentils can go such a long way! Red, brown, black and green lentils are all wonderful options and can be turned into soups, savoury pies, meatless meatballs, curries, dahls. SO many delicious options! And cheap... too! We buy our lentils from our local Indian grocery, which has a great variety and allows us to support a local small business. Health wise, lentils are a wonderful source of plant based protein. 1.5 cups of cooked lentils has as much protein as a 85g piece of chicken! When combined with brown rice, lentils are a complete protein, giving you a rich source of amino acids. Protein aids in muscle growth and synthesis and gives us energy! Lentils are rich in iron as well! A great plant based option for vegans and vegetarians. Research has shown that lentils can lower cholesterol, stabilise blood sugar, are low in fat and excellent for cardiovascular health.
