23.01.2022 Easy lunch idea - slow cooked shredded chicken Slow cook and shred some chicken breast for easy weekday lunches. Ingredients ... 1.2kg chicken breast 2tsp Italian herbs 1 cup chicken stock Salt and pepper to taste Method Add all ingredients to the slow cooker and cook on high for 4 hours. Shred with 2 forks in the bowl and then separate into 12x 100g portions. It freezes well so freeze what you don’t need for the next few days. Today I combined my 100g shredded chicken with some mayo and parsley and had with salad greens as an open sandwich. You can also vary the flavours for a Greek, Mexican or whatever your heart desires lunch!

04.01.2022 I have always absolutely loved Christmas. The connection, together time, festivities and spirit of giving - I love it all. Since I became a mummy I’ve loved it even more - it makes me all warm and squishy inside!!! One of the best things about being a mummy at Christmas time is the carols and I’ve had a fleeting dream to write the boys their very own carol. It’s been a few years in the making but 2020 reminded me to slow down and actually do those special things on our maybe one day list. Nathan and Alistair - this is for you! Christmas is here. I know it’s rough with the phone recording but I’m sure we can sing and dance to this together

03.01.2022 Alistair loves rainbows so today I surprised the boys with a visit to Cha Cha Chocolate to pick up a gorgeous rainbow mat for him! Of course we also needed wonka bars... I’m not sure what looks more colourful now... the play room with our new mat or Alistair following his indulgence...

02.01.2022 320 1 inch tempered chocolate squares in all shades of creeper... the cake journey continues!

02.01.2022 I love tomato relish! The recipe I’ve created is adapted from my grandma’s. I have such fond memories of her relish - I just don’t have the patience for some of her prep, or the waistline that needs some of her sugar haha. This recipe is loved by all who try it! Sasha’s Tomato Relish - 3kg vine ripened tomato, diced - 1kg brown onion, diced ... - Salt - 500mL apple cider vinegar - 400g sugar - 3tbsp mustard seeds - 3tsp cumin - 2tsp turmeric - 2tsp coriander - 1/2tsp ground ginger - 1/2 tsp all spice Place tomatoes and onions in a bowl and sprinkle with salt. Cover and leave to stand at room temperature for at least two hours, ideally overnight, and then strain off the liquid. Add all ingredients to a large pot and bring to the boil. Reduce heat to low and simmer uncovered for approximately 60 minutes or until cooked through and most liquid has evaporated. Bottle in sterilises jars while still hot. This makes a lovely gift and stores for around six months in the fridge in sterilised jars.
