Our first 10 students finished their course today and made us all proud. Their MERLO coffees got better and better all week! Look out, 14 new students starting Monday!

13.01.2022 Well our graduation night went off with a bang on Monday night! Over 200 family, friends, students, VIPs and sponsors saw a record number of ICE apprentices and trainees graduate. Also, The ICE Apprentice Chef of the Year competition saw Dylan Seeds take out the first prize. He’s off to London, Paris and Venice when it’s safe to travel again... Tha is to UNOX Australia. 07.01.2022 Just wanted to say a massive public 'thank you' to the amazing, supportive, extremely dedicated, honest and hardworking Danielle Dixon, who as most of you know, is the Head of School and Executive Chef (as well as being my right hand 'gal' at ICE). She is fabulous at her job and, all the students and the staff love her! Not to mention, she's one of the most talented and natural teachers I've ever known, but also one of the hardest workers and most capable people an owner of ...a business could ever wish for. I am almost ready to pass on the baton to you in the next couple of years when I retire, and I know that you're ready for this too in the future. I have every faith in you Danielle... With or without your hat, please know that I am grateful, thankful and most of all honoured and privileged to have you in my life, not only as my brilliant 2IC at ICE, but as my friend too xx

Were so excited spring is here, the beds have been fertilised, turned over and mulched and now we can get them looking beautiful and being productive again after lying dormant all winter.

06.01.2022 Today we heard the very sad news, that one of our fabulous young ICE student chefs had taken his own life 2 days ago. Not only was he one of our favourite students, with his cheeky grin and larrikin ways, but he was also a very dedicated and talented aspiring chef. Our thoughts are with his family, partner and friends at this extremely tough and sad time. If any of our students, past and current, or any of our client Chefs and restaurant owners ever need to talk to us abou...t anything thats worrying them, please, please, please come and see us, even if its just for a coffee and a chat, or a shoulder to cry on or just someone to listen, were always available and our door is always open for our for ICE family. We cant help you, if we dont know you need our help. We are devastated by this loss and the whole ICE team are extremely distraught and so sad that we didnt know what he was going through... Honestly, something more needs to be done to help our mental health in this industry....
