24.01.2022 Here are European Nettle & Aussie Nettle and yes the native has the large leaves and needles. The sting disappears with drying or cooking. Euro has a sweeter fragrance while Aussie produces a darker brew. With all the rain coming both are great to help with damp and accumulation. Try a combo of Rosemary, Sage and Nettle then vary the ratios to get different flavours and effects



23.01.2022 Picking up the nights drop of rose petals. The strongly scented red roses make a delicious tea that gently drains damp and supports the Shen. It combines well with the softer green teas such as Oolong. It gives a wonderful top note to Nettle as well as the stronger Qi tonics like Codonopsis, Astragalus and Ginseng.

20.01.2022 We have had some cold days but this has been a very warm June, one of the top 4 apparently My garden has been showing me that all through. I’ve tomato’s that haven’t stopped growing. Mulberries that haven’t lost their leaves and our Nectarine has flowered 6 weeks ahead of usual. We’ll need regular good rain to prevent another mongrel fire season. 19.01.2022 Well Sprinter was a warm one, Spring kicked in with a week of Westerlies, the Lyrebirds stopped singing and Red Cedars pushed out their new seasons growth. Now here we are with Spring Equinox tomorrow and the Golden Whistlers and Grey Thrush are singing their heads off in the Dawn Chorus. Lots happening here with our focus on lantana clearing and Bush Regen plantings. In the garden everything is busy so in this photo we have Bai ji - Chinese Ground Orchids pushing their way through the ground cover of Jiao gu lan - Vietnamese Orchid Vine. Also from the beginning of Spring in the 2nd week of August of Red Cedar shoots.

17.01.2022 Our first Banana Passionfruit. They have firmer flesh and harder seeds with a very different aromatic sweet sour flavour. These qualities aid in clearing nasal and sinus congestion, stimulate digestion and assist in clearing damp heat. The fruit Pearls can be sprinkled through salads and will hold firm in yogurt and other soft deserts. 14.01.2022 Summer is here! That’s two warm cicada song filled days in a row. Our Cumquats are still bearing more than bountiful and our first crop of Bamboo shoots is a rippa, so Bamboo and Cumquat chicken stir fry tonight.

14.01.2022 Well that was fun wasn’t it kiddies. 280mm here since 8am Friday and it’s definitely a wet Sprinter. Here are this seasons Perilla or Shiso germinating amongst the mulch of a very wet garden path. Perilla is traditionally used for cold damp patterns of asthma, sinus and headaches. Also used in damp cold nausea patterns associated with an off meal especially seafood.



13.01.2022 The first Summer Heatwave starts today so prepare and take care. Always remember to drink before you get thirsty. All the cooling herbs are great to aid the body to cool down and please be aware of heat stress signs! Heatwaves kill far more people than natural disasters like bushfires, cyclones and floods. Adequate preparation is essential, especially for people at high risk: the elderly, babies, young children, people with health and mobility problems. 12.01.2022 The scent of Paulownia flowers welcomes in Sprummer (we have 6 seasons here on the coast). Traditional uses of the Paulownia tree are as a magnificent cabinet timber and the leaves for a wide range of skin conditions, from ulcers to frostbite.

11.01.2022 Here's my next batch of Sage Coconut Ferment. The bounty of Sprummer is giving us plenty to experiment with. The bottle on the left has a cupful of Mother Wild Ferment using raw coconut water in the jug. Some fresh sage leaves from our Kitchen Garden are added with each new ferment. Enjoy! The 2nd photo shows the chopped sage added and the bottle filled leaving a 50mm gap that allows the fermentation bubbles to be released tomorrow. At room temperature a 1-2 day room temperat...ure ferment is quite enough to produce plenty of bubbles without producing too much 'vinegar' while allowing good sage taste. You can also use Kefir or Kombucha starters. For a wild starter just add your prefered herb leaves or flowers to a 1/2 bottle of coconut water and let it ferment. Each batch will add extra microbes and these will change with the seasons and weather, keeping it wild! Just remember that many of these wild microbes are yeasts and will produce vinegar. You can also purchase different types of yeast as they did in the Sobah Beverages Beer which produces a zero alcohol fermentation. Well done Sobah! The 3rd photo shows a bottle of Rose Petal Ferment and the next petals top add in. The jar on the left is of Nagumi(skins and seeds included) & Passionfruit(whole pulp) Juice which we'll freeze in ice bocks for adding to whatever we fancy later on as well as a new ferment! We'll also be experimenting with our own Limes, Chillies and probably Marjoram because of its delicious flavour and traditional herbal use. Have fun! See more

In just a couple of months, the first Australian detection dogs will be fully trained in how to detect the odour of COVID-19. 03.01.2022 I know that I’m always nagging about eating more veg. It’s because good food is paramount to good health. Here’s a snapshot of our dinner tonight. This was created by my partner after she’d had a full day at work and jobs on the farm. There’s 8 veggies here plus brown rice and seared tuna. Dressing is coconut aminos, honey and sesame oil. Toasted sesame seeds on top. It’s so much easier to fix your health when you eat well.

01.01.2022 It’s a perfect day for baked Persimmons and nutmeg-nettle tea. Use apples or pears if you’ve no persimmons. Core the fruit n fill with a blend of dates and walnuts or pecans and a sprinkle of nutmeg to taste. Bake in a bath of nettle tea with mandarin peel for extra flavour. Or place in a steamer using the tea for steam.
