19.01.2022 In our last post we mentioned that if the water we use for fermenting our washed lots isn’t running clean enough we process incoming cherries as natural lots instead. Well sometimes (read: much of the time) it goes the other way - we are up so high that it is often too cloudy or wet (we are sometimes literally IN the clouds ) to dry coffee as naturals in a reliable manner. Natural (dry) processed coffees - where the seed is fermented and dried inside the still intact cherry... - are more susceptible to mould growth if conditions are too cold/cloudy/wet This is unsurprisingly terrible for the quality of the final coffee (leading to ‘off’ flavours in the cup). Which is why even though our natural lots tend to sell better than our washed lots in Australia’s current specialty coffee market (which could be said to be favouring the fruity, sweet, big body characters natural coffees posses) we produce more washed coffee than natural - this is because we will only process cherries as natural lots if we can be sure they will not be at risk of mould and will dry in good time - not very common when your washing station is in the clouds! (Although it is arrestingly beautiful at times ) This situation isn’t uncommon for producers - the market requesting certain styles of processing that may not be inline with the best practices for that particular producer (group) and their situation. It is something to be cognisant of as buyers - is your request potentially putting the producer at risk of defects and are they bearing that risk or are you? For what it’s worth our growers receive an upfront premium and full payment at the delivery of cherries based on ripeness of picking (and in future - regenerative land management practices) hence we bear any risks from that point on - as it should be! #UgandanCoffee #AdelaideCoffee #TraceableCoffee @ Mt Elgon, Uganda

13.01.2022 Well, it’s all stations go for us here at Intersection Traders! Sorry for the radio silence, it’s been BUSY The last little bit of coffee from the previous harvest is about to be roasted and brewed - we’re sad to see our first harvest of coffee go, however the timing couldn’t be more perfect because we have fresh coffee from Kapchorwa just landed! The 2019-2020 harvest is tasting absolutely amazing, still with the same intense sweetness and round body we’ve come to expect... from Kabeywa (due not only to the 2000 masl elevation but to the meticulous picking of the growers that we buy cherries from - itself made possible by our innovative and resilient quality assessment and up-front premium based buying program). Both the washed and natural lots are again, incredibly clean and vibrant - possessing fantastic favour clarity and separation. The washed is delicate but powerful, with notes of brown sugar, orange and jasmine. Meanwhile the natural is all about those jammy (but not overripe) mixed berries! This quality wouldn’t have been possible without the phenomenal work of our Ugandan team - who managed to achieve coffee of this level whilst battling unprecedented (and untimely) rain, landslides, the threat of food shortages and COVID.
