24.01.2022 An update from INTRA: We remain takeaway at this stage for both food and coffee. We are accepting keep cups and encourage that you use them. Please do not linger inside for too long. These decisions are mainly influenced by our very limited capacity (7 customers inside due to the 1.5m and 1/4sqm rule) ... Please adhere to these rules, theres still a small stretch to go before normality returns and we ask that you respect these guidelines. Thanks to everyone for there tremendous support during this time, not long to go now. We are working on a completely fresh menu for when we re-open fully and a slightly new set up to make the space work better. 24.01.2022 Our third run of events for this August features the incredible team from @temporadacanberra. They will be taking over our space for two weeks of evenings starting from the 11th onwards. 22.01.2022 Sausage and Egg Muffin, Pickled Red Onions and XO mayo. Our version of one of the best breakfast items ever devised. We source our all-beef, no-grain sausage mince from the fantastic @griffithbutchery, pickled red onions for a balance of sweetness, acidity and texture. The XO sauce we make ourselves as a way to use up things that may otherwise be waste. The ends of shallots, onions, garlic, chilli, ginger, herb stems, ham, bacon rinds, and much more are all slowly cooked down in to a fragrant mix, then combined with classic XO sauce condiments and preserved. The sweet, savoury and spicy sauce rounds out the drippy, sloppy muffin to become a shining beacon of breakfast-time delight.

20.01.2022 Tomorrow will be your last chance to get your hands on our current menu. Soiya later to the Reuben, Salmon and Avo bagels, Mushrrom, Big Cheese and Pizza jaffle. They’ll be making room for some stellar new bites by our incredibly talented head chef @yourmatesmate The new menu will have a focus on sustainability, nose to tail, waste reduction and as always being super simple and tasty. We will be closing our kitchen at 1pm tomorrow (Thursday) for prep. Get in early for your last chance.

19.01.2022 Braised Pigs Head Focaccia with Giardiniera and Provolone. We chose to use the pigs head out of respect and honesty to the animal, and in pursuit of reducing waste. Each slice of bacon, and each pork chop, belongs to an animal with four feet and a head. These trotters and heads sometimes make it to the butchers cabinet, or into a sausage, or terrine, but often times they end up in abattoir bins. We’re trying to show people that all the parts of the pig are delicious, and hope...fully we can encourage a few folks to go out and try to cook their own pig heads. If you’ve got any questions, our chef Aidan would be more than happy to chat to you about your pigs head. Pigs heads from Griffith butcher braised slowly with fennel, celery, onion, garlic and a bouquet of hard herbs. The meat is butchered off the pigs heads by our chef, then braised, and then sliced into little morsels of bouncy, supple pork. Crisp, crunchy mixed pickles, creamy provolone, and a mustard mayonnaise finish off this delightful focaccia sandwich.

17.01.2022 We will be open during our usual hours for takeaway. Full food and drinks menu is available. Plenty of places to sit and enjoy the sun in the park with a jaffle and a coffo. Retail shelves are also stocked up. If you do come through please maintain a suitable distance between each other and note that our capacity in the shop is 13 patrons. Stay safe and thank you for your continued support during these uncertain times.
17.01.2022 Each day we throw all uneaten food and other food items we can’t use into a bucket. This bucket gets collected by a couple of legends that take it home to use as chicken feed. We are proud to say that very little of our waste actually goes to landfill. It’s another method we introduced to help reduce our waste and our carbon footprint.

15.01.2022 Egg Salad Tartine The egg salad comes as a creamy, zippy vessel for your morning enjoyment. Boiled eggs are bound with a light mayonnaise, capers, cornichons, dill, sauce and tarragon until they reach delightful cohesion. The egg salad is placed atop crunchy sourdough, and a lofty, zesty herb salad crowns the tartine.

14.01.2022 Happy to announce we will be hosting @lach_cutt as he takes over our humble kitchen next Friday. Come have a night with us, eat some incredible food and enjoy some fun natural wines. This will likely be our last event for the foreseeable future so lets make the most of it. A bit about lachy; hes been working in hospitality for over 10 years now, doing the rounds through Canberra. Hes most recently been working at @restrelae (Copenhagen). During his time overseas he developed a love for bullar (Swedish buns) which led him to start @under_bakery which has quickly become respected and loved in Canberra cafes. Most recently hes been serving some heat over @kiosk_cbr . - We will be limiting the bookings in light of the current issues.

13.01.2022 LP’s Blood Sausage Bolognese Jaffle. We took a classic comfort food dish in bolognese and combined it with something people may be a little less comfortable with. The blood sausage comes from @lpsqualitymeats in Chippendale, their blend of spices and textures is the perfect base to build a bolognese sauce around. We chose blood sausage as it utilises parts of the pig that otherwise would go to waste. The LP’s sausage uses the pigs blood, head, and shoulder in the mixture which creates a singular texture and a unique taste. Combined with classic bolognese vegetables and herbs, provolone and Swiss cheese, this comforting jaffle is here to give you saucy, warming satisfaction.

08.01.2022 This year with Aidan in the kitchen we are making a conscious effort to reduce our food waste and promote more sustainable practices. An area that we identified was milk waste which is an issue with limited solutions faced by all cafes. We decided to turn our leftover textured milk into fresh ricotta that has featured on both our day and night menus.

03.01.2022 Having returned back to Canberra this year from a stint at @st.john.restaurant in London, Aidan joins us as the new head chef of Intra. His focus on simple yet enjoyable and sustainable food is a driving principle in our new menu. The menu is taking a new approach; a conscious approach to seasonality, a growing focus on preserving and fermenting, and a springboard to showcase lesser used cuts of meat. Through these things we hope to reduce our own waste, open dialogues within the community around us, expand our knowledge and deliver delicious food at the same time.
