21.01.2022 Our Eye Fillet steaks are so tender and easy to cook. If you are wanting an easy meal over a summer hot day why not have eye fillet in a wrap. You can use any bread Judy add your vegetables and salads. A perfect meal pan fried or on the bbq which ever is easier. Great for New Years Eve party by the pool. You can also have it on a plate with salad and mash potatoes. It’s the steak that you can’t go wrong with as it’s tender and tasty. Great for people who are anemic/Iron deficient. Have now had two days in a row to help get the right amount of protein to restore my health.

12.01.2022 Thats our last post for Christmas in July for 2020. We had a great time cooking and entertaining family and friends. The little kids enjoyed their presents and made it all worth our efforts seeing them having a great time with the older kids. The Irish Baileys cheesecake and Irish bailey mint slice for desert was a success. The ham, pork roast and lamb were a success. The amount of Kerry good butter used for all our dishes helped make it taste so good especially the potato...es and Irish pork sausages cooked in the butter. The catastrophe that struck yesterday morning in the heart of Beirut is so shocking, so terrible, that my heart and sympathies are with the people of Lebanon, who are not only facing economic hardship as well as dealing with covid, but now must face this disaster. I was meant to be there for two concerts in the spring of this year, sadly postponed, but as soon as possible I would like to return...and give back the love and support they have shown me for so many years. 03.01.2022 This is my beautiful 44 year old sister, she was diagnosed with a very rare aggressive cancer in March last year - Pleomorphic Rhabdomyosarcoma. Only 8 people i...n every 10 million get it. She has had multiple surgeries, radiation and one dose of chemo and now needs other treatments. Karen has 4 young biological children the youngest being only 5 and 4 older stepchildren. She is in the fight of her life and time is not on her side.
