23.01.2022 As we are rolling into a new year, it brings new goals and aspirations. But as I sit here reflecting on the year that was I wanted to finish it off with a positive feeling. 09.01.2022 Crispy Chocolate & Tahini Granola Looking for a healthy way to kickstart your day? Try this delicious granola that the whole family will love! You'll need: 3 cups of rolled oats... 1 cup of coconut flakes cup of sunflower seeds cup of pumpkin seeds cup of hazel nuts, walnuts or a combination of the two cup of cacao powder 1 tablespoon of cinnamon powder teaspoon of sea salt For the paste: 1 cup of pitted dates cup of hulled tahini To make: Preheat the oven to 180 degrees celcius. Soak the pitted dates in two cups of hot water for five minutes. Remove the dates and reserve the water they have been soaking in. Add the dates to a blender with three tablespoons of the date water and the tahini. Blend until the mixture turns into a thick, caramel-like paste. Add more date water if necessary to achieve the desired consistency. Mix all the dried ingredients together in a bowl, add the paste and mix with a wooden spoon or spatula until well blended. Line a baking tray with baking paper. Spread the granola evenly over the tray. Bake for 10 minutes. Remove from the oven, stir and place back into the oven for another 10 minutes.
