15.01.2022 Our cup runneth over We’ve cracked one of the last known LITD Black IPA cans tonight and matched it up with a mighty fine 15yr old Speyside Single Malt Scotch Whisky. The huge malt bill and IPA backbone of the LITD complements the spiced raisins, butterscotch and dark chocolate excellence of the GlenAllachie perfectly.... 13.01.2022 TASMAN WHISKY -SINGLE MALT- IronHouse Distillery’s Single Malt Tasman Whisky is produced on the shores of the Tasman Sea. Although there is an almost pristine calm this morning, the winters sunrise at the distillery shores, the Tasman Sea is a difficult and dangerous sea for sailors. Known as the Ditch, the Tasman Sea is notorious for being unpredictable and prone to violent storms. Many people have lost their lives crossing the Ditch and ships have disappeared completely..., leaving no trace. The Tasman’s Maori name is Te Tai-o-Rehua and is a marginal sea of the South Pacific Ocean, found between Australia and New Zealand. It measures about 2,000 km across and about 2,800 km from north to south. We love it here at our little distillery by the sea, waking up to that view is no bad thing. Our whisky matures in a bonding room mere meters from the waves, the ocean salt air adding to the rich caramel undertones of our Spiritus Fermenti. A true Tasmanian Spirit indeed. 10.01.2022 From the darkened heart of winter, an apparition, wraith like appears in the black GHOST IN THE DARK - Fear of the Dark 3 ! You will be afraid of the Ghost in the Darkness..... But you will indulge in these fears. Oh Yes.... To start with, there be subtle floral pine, red wine, roasted chocolate and whisky notes hitting the ol' factory senses, then comes the pour. It’s a dark brown, black ichor swill topped with a crest of mocha coloured head. Sitting at over 100 IBU’s the rich taste of caramels, vanillas, roasted malts and grandfather ports mix well with a heavy mouth feel and an alcohol warmth. All this is backed up by that sweet fruity pungency that’s almost maddeningly moreish. Grab some before they pass into oblivion like a spectre in the twilight ? A Ghost in the Darkness. 07.01.2022 Disgorgement of a Dram After 5 years, this cask was more than ready to relinquish the Bourbon Barrel Aged single malt. A surge of caramels, toffee and vanilla mixed with a slight menthol and a hint of oak tobacco on the nose during this cask decant. It was no bad thing, no bad thing at all.... And yeah..... We tasted it. So very very dram good. At a cask strength level the oils and the alcohol heat mixed in the the huge flavour profile we’ve come to expect, with just a hint of salted caramel. Stupid grins ensued. 04.01.2022 Well Hello there, we’ve missed you Guys and Gals, Ladles and Gentlespoons, Drams and Dramsels. As you can see here, we’ve been busy polishing and tidying up our little brew house/distillery by the sea, in readiness to welcome you all back with open East Coast arms. Not forgetting to mention of course, preparing boozey goodness aplenty.... Alas, even with the amount of excitement that’s been created with the recent State government announcements, after carefully reviewing the restriction policies (so many pages of rules and regulations. So very, very many) still in place during this next phase we have unfortunately made the decision to hold off from opening to the public for the time being. Other than accommodation at the Brewery Estate, we will not be opening this Friday from 3pm. We’re working on a solution to these new rules that we all must adhere too and hopefully soon our East Coast hospitality will be back, better (and with more beer) than ever.
