25.01.2022 My last visit to Abruzzo, the birthplace of the Caserecci, inspired me to add this delicious pasta as a special on the menu. The word Caserecci is a combination of the words "home-made" and "small". Its twisted shape is perfect for a thick sauce because the pasta wraps itself around and almost hugs the sauce - meaning that you can fully savour the sauces flavour at the same time as the texture of the pasta. 23.01.2022 The Amatriciana sugo (sauce), as it is now called, was created in the village of Grisciano. In the ancient culinary traditions of the shepherds of that area, pasta was tossed with guanciale (cured pork cheek) and pecorino cheese.
