24.01.2022 You voted and it’s here... the recipe for my Rise’n’Shine Muffins. Packed full of healthy goodness, they’re fabulous for a snack, lunchbox or even breakfast. I personally like mine with lashings of butter... but they’re so moist that it’s truly not needed. I’ve included both the Thermomix and conventional methods so anyone can make them. Enjoy! And be sure to tag me when you make them RISE’N’SHINE MUFFINS... 220g Zucchini (washed & trimmed) 200g Carrots (washed & trimmed) 65g Honey/Maple Syrup OR 65g Coconut Sugar 100g Tapioca Flour 50g Coconut Flour 1 & 1/2 teaspoons Bi-carb Soda 2 teaspoons Cinnamon, ground teaspoon Ginger, ground 3 eggs 50g Sultanas or Raisins 50g Coconut Oil, melted (or butter/ghee/olive oil) 25g Sunflower Seeds or Pepitas * Preheat oven to 180C and prepare muffin tray (I use a high quality silicone tray). THERMOMIX INSTRUCTIONS* 1. Add carrot & zucchini to mixing jug, process for ~ 4sec/Speed6 2. Then add honey, tapioca, coconut flour, bi-carb & spices ~ 4 sec/Spd4-5 3. Add eggs, sultanas, sunflower seeds & oil ~ 6sec/Spd4/Rev CONVENTIONAL METHOD 1. In a large bowl add the dry ingredients and whisk to combine. 2. Place the eggs, oil and honey in a jug/small bowl and whisk. 3. Add the wet ingredients to the dry and stir to combine. 4. Grate the carrot & zucchini, and fold into the mix along with the sultanas and sunflower seeds. * Spoon into muffin tray and bake for 20-25mins, or until firm to touch and golden. Note: Now don’t worry if they look green inside the next day it’s just the sunflower seeds reacting to the cooking process, they’ll still taste the same. But if you’d prefer, you could substitute the sunflower seeds for pepitas, walnuts, pecans or pine-nuts they all compliment the muffins perfectly. Storage: These muffins freeze fabulously! Simply place them in a container and pop them in the freezer. 23.01.2022 The boys had been asking for some Chocolate Granola for sometime and I finally got around to making it. And when a couple of friends requested the recipe too, I got myself together (just) and decided to share it... so here it is!!! CHOC BUCKWHEAT GRANOLA [Gluten-free, dairy-free, vegan, paleo]... 60g Coconut Oil 80g (1/4 cup) Maple Syrup 3T (80g) Tahini (hulled) 1 tspn Vanilla Paste (or extract) 2T (24g) Raw Cacao Pinch Salt 285g (1 1/2 cups) Buckwheat (groats) 75g (1/2 cup) Sunflower Seeds 42g (1/2 cup) Dessicated Coconut 35g (1/4 cup) Hemp Seeds 75g (1/2 cup) Pepitas 60g (1 cup) Coconut Flakes *Preheat your oven to 150degC (fan forced), and line a large tray (with sides) with baking paper so that the paper comes up the sides of the tray. *In a small saucepan add the the Coconut Oil, Maple Syrup, Tahini and vanilla. *Heat gently (low-med), and stir occasionally until all ingredients are melted together. *Add the Cacao and the salt and stir/whisk to combine. *Remove from the heat and set aside. *In a large bowl combine the Buckwheat, Seeds and Coconut. *Pour the melted ingredients over the dry ingredients and stir to combine. *Bake the granola on the prepared baking tray for 15minutes at 150degC (fan forced). Stirring once half-way. *The mixture will be soft - but will harden when cooled. (If you wish to have more colour on the granola, just cook it longer in the oven, but be sure to not let it burn). *Cool the granola completely on the tray before storing it in an airtight container in a dark place. We enjoy ours sprinkled over yoghurt in lunchboxes, added on top of a warm winter porridge, or as a little snack on the go. 16.01.2022 My kids are so blessed to have cousins that are similar ages to them. On my side of the family there are 10 grandchildren, with two of my boys being the oldest and youngest respectively. It can be hard to get them together when we don’t live near each other, but we try to make it happen as much as possible. Farm days like this build so many memories and it’s so nice to see their relationships develop deeper every time they are together. I still remember so many fun and special moments growing up with my cousins... we are still close today and will forever have that bond. 14.01.2022 Truly my happy place. Working in the garden, growing my own produce, providing for my family, enjoying the outdoors. It was so hard being pregnant... my body really struggles... and I’m just not able to get in the garden like I usually do. Everything became completely overgrown, but I just kept telling myself that we were building the ecosystem... you see the bugs we’re loving it, the soil was happy as it wasn’t bare, and I just kept pulling weeds and dropping them, which i...n turn also fed the soil with organic matter. Now that I’m more able bodied I try to get in the garden every day... even if it’s just for 5minutes. To check on my plant babies and harvest any produce. Now I’m impatiently waiting on a seed order from @thediggersclub so I can start sowing for Spring crops. So considering how much I’ve been craving chocolate lately (breastfeeding Mumma ) and the fact that my Mr8 just loves chocolate pancakes I’ve grabbed out this recipe and thought you might like to enjoy some too!
